chinese love to eat, like to find the cates, they are bound to create new tastes. recently, there is a series of videos introduce the eating culture all of china on the internet, it come from china central television. it has seven parts to introduce different areas and different food, and the different meanings beyond the food. and then let me introduce them and my understanding of them. a gift of naturechina has a long history, so, it also has a long eating history. people who closeness to nature always know that all of the food is the gift from nature, most of people depend on the nature to live, they know the law of nature, so they follow the law to find the food, to eat the food.in this part, it shows the most natural people how to use the nature to fill their need. from the highland to the coastland, from the north to south, different areas have different food, but they all have a comma point, they all come from nature, have no any process.nowadays, people live in the cities, increasingly the development of cities and technology, most people always busy in their work, and they have no time to close the nature. so, when us far away from the nature, we must more thank those people who take the food from nature to us. dont forget the gift from nature, and dont forget the people who bring the food to us.the story of staple foodchinese is having big land and big population, so the different climate and geographic environment bring up the different staple food. people of the north love the noodle and the south love the rice, our ancestor already know how to do the best delicious food under lack of the materials. on the northwest of china, the climate is very dry and cold, it let the “momo” become a specific staple food. from the old, the five cereals in china are always changing. today; the three productions of cereals are rice, wheat and corn. so, never mind how they are change, the main position of the rice is never ever changing. on the south of china, people also change the shape of rice to do different food, such as the rice noodle. chinese food is simple and difficult, the base material is simple, but one thing can do most of different delicious food. i always believe that chinese is a very smart nation; the tongue of chinese is the most special.the inspiration of changeeven today, most of english words come from chinese, they nearly all are name of food. chinese like to use the food to best, some foods are not delicious we direct to cook, but we can change their shape and then they become good taste.toufu is the most important food in china, and it has been thousands years. i dont know who create it, but i know it is the most greatest invented. it changes the fate of the soybean. soybean has abundant protein, but people dont like eat the soybean, because it isnt very delicious. soybean is a high production and cheap food, so people need to find way to change it, and fortunately they found out. toufu is put the gesso into cooked liquid of the soybean, and through chemical reaction, the liquid of soybean congeal and become toufu. on the basis, we can do a lot of different toufu foods. people also can absorb the nutrition on the soybean in a better way.the taste of timetoday, we can use the high technology to keep the foods, such as refrigerator, desiccating agent. but, at the old time, our ancestors have no any machine and technology, but they also need to keep the food go bad. so they find different ways to do it.pickle is a comma way to keep the chinese cabbage on the northeast, chinese cabbage grow up in the winter, people begin busy to do the pickle at that time. different from north, south of china have the different ways to keep the food, it depend on the different climate. southerners base the climate of damp and hot to find the way to keep foods. and the taste of “la”, is the most special and important taste in the south of china.the taste of time not only tastes of time, it also tastes of memory. nowadays, most of young people far away from hometown live in the city; they have no chance or no time to do pickle or bacon. but, they remember the tastes of memory.the secret of the kitchenthe delicious food cant do without cooking utensil, so, the kitchen is absolutely necessary role. kitchen has a lot of secrets, different foods have the different cooking utensil, and there are several ways to cooking chinese food, including boil, steam, fry, and so on. therefore, some chinese foods are difficult to cook, the process need a lot of time.of cause, the food also need to differentiate occasions, on some occasions, the food need a good looking like in the restaurants, but most of us just cook in home, so we just need the food can eat. in most cases, we just need the happiness of home, so, the secret of the kitchen is no secret.the reconcile of the five flavorschinese are particular about the taste of food, so, they like to find different tastes. there are five flavors, sour, sweat, bitter, peppery and salty. all of those flavors come from the green food; chinese like to do those flavors by themselves.people of southeast china predilection the taste of sweat; they love to put lots of sweat into their food. people of northwest love the taste of peppery. but, someone ever said that the most unsavory food is having no salt. there is the most important taste in chinese food is “xian”, it is a abstract theory and hard to explain in english. it means fresh and delicious, it must to keep the taste of original of food. it including in five flavors, but also beyond five flavors.the field of oursthere is an old chinese saying, “backer has mountain, the mountain to eat; near the sea, the sea to eat.” people use their wisdom to create their live.on the southwest of china, there have no any flatlands, but the smart people create the bench terrace. people near the sea; they can find the sea food. people live in the tibet plateau also can depend on the climate to seeding and survival at this difficult environment. people live in the cities; also can seeding at their roofs.china with a large population, we can use the limit field to support the largest population. it needs the wisdom of beyond imagination. chinese eating culture have a long history, it use the special way to feed chinese from generation to generation, it from the pace of the time to change. but we regret of some disappearing traditional customs. a new generation of young people may have no idea of some traditions, but we can learn them from this video, we were called to protect our eating culture. this series of videos is impressive on me;
