communication of oil-tea culturespeaking of the oil-tea, maybe we can think of the oil-tea camellia which it is a special edible oil tree in china. most of chinese like drinking tea and i prefer tea to coffee, as a chinese. as we know that tea is a drink, have you heard of the tea as a kind of food?in my hometown, yao autonomous county of guilin gongcheng, where people put the tea as a kind of food. the people of gongcheng(恭城) “play oil-tea ”(“打油茶”) with breakfast each morning, even some families cannot do without tea at all of meals. the oil-tea is not called cook but beat, was around the unified call method, while the tea has its different flavor in different places. about the camellia series - making method, we use old leaves of black tea as the main ingredient, oil to fry until slightly coke and sweet, add salt water to boil, and most add ginger boil. the flavor of boiled oil-tea is thick and astringent, bitter and spicy. in my hometown, people drink tea regardless of the season. the four seasons of a year, a day sooner or later, people will drink the oil-tea. no sooner or later guests arrival, we will “play oil-tea” to serve the guest at any time.“gongcheng oil-tea” is a kind of traditional food of gongcheng yao compatriots. it began in the tang dynasty and has a history of over 1000 years according to historical records. after 90 years of the last century, “gongcheng oil-tea” had spread to the guilin and some places of guangxi, now drink oil-tea has become a funny thing for peoples diet leisure.the person of gongcheng has a special method to “play oil-tea”. they use a special pot to beat. after beating, add water into it, boil and cook until duften. then, we will often add some scallion or caraway to it. after doing it well, we can smell nice. at last we can drink it with some rice flower and nut. we can taste a bitter of tea, after is a mellow flavor, and lead a person to endless aftertastes. after oil-tea, we can add water to pot and continue to cook. but the taste has not been previously strong. at gongcheng, people often say “一锅苦、二锅呷(涩)、三锅四锅好油茶”and “恭城油茶喷喷香,既有茶叶又有姜”. the sentence reflects the essence of the oil-tea. the two main ingredients of oil-tea are tea and ginger. everyone will drink the oil-tea, who arrive this place.there is a tale about the oil-tea in my hometown. long long ago, there is a national who is named yao, they lived at qianjiadong, and had little contact with the outside world. they cook oil-tea very well. in the ming dynasty, some people say that they do not pay imperial-cereals (皇粮). so, the emperor of zhu sent troops to suppress them. some people of yao escaped to gongcheng. some of them settled in jiahui(加会), who is called bafang(八房人). at the same time, they brought their traditional delicacy-oil-tea. they lived in the chajiang river, and had convenient transportation, numerous of persons. so, the oil-tea had spread quickly. in qing dynasty, there are one thousand households at tang huang village. fishing on the chajiang river, the other people should pay taxes to them. they built tang huang temple, and held a grand festival every three years, near the masses of all ethnic groups to participate. the temple fail provides that the native are not allowed to grab the fireworks, fireworks will only be allowed outside of the village to grab. gentiles to participate in the festival, the people of bafang were warm reception. the custom of drinking oil-tea and hospitality were spread, since then.in my hometown, there is a custom to entertain guests with oil-tea. about the way to entertain guests with oil-tea, the dong is different with yao. in nationality of dong, in order to show respect, the master send oil-tea to the guests with hands and say some humble words, some people, who are good at singing, maybe sing song instead of words. the guest must drinking bowls, considered to the master face, also there is good pairs mean. after two bowls, if you do not want to drink, you will give the dishes and chopsticks to the master. if you only give the bowl, its meaning of you would like to drink another one. certainly, the master will fill a bowl of oil-tea and sent to the hands of guests happily. but in yao, at first, before the guests drinking two bowls, the master would not sent them chopsticks. they will add chaodou snacks or rice flower to bowl. drinking all of the oil-tea, they need to leave some snacks in the bottom of the bowl, to show more than endless, to send chopsticks until the drink the third bowl, so guests have to drink more than three bowls. if you drink one or two bowls, the m
