Only a few producers make single-variety. The typical blend consists of Merlot, Cabernet Sauvignon and Cabernet Franc, with small additions of Petit Verdot and Malbec. The winemaking in Bordeaux today is a highly controlled process, with widespread use of stainless steel vats for fermentation, cooling apparatus, and a high degree of hygienic discipline. Fermentation usually takes place in stainless steel vats but some producers may use wooden fermentation vats. Most serious wines undergo barrel-ageing for 18-20 months. During the process, the wine needs to be racked in order to clear it of lees. The winemaker than decides the right blend for the vintage.
