摘要 中国乳品加工业的发展不仅有助于改进中国人民的饮食和营养 结构。而且可以增加中国农民的收入，改善中国的农业结构。但中 国对乳品加工业的忽视，导致了乳品加工行业投资小和技术含量低的 情况。这些在中国乳品加工业的发展改革中非常迅速的显现了出 来。在投资和技术方面，中国东部沿海地区发展很快，他们从美国、 加拿大和欧洲进口了奶牛并且引进了先进喂哺养技术和管理经验。 可以预见中国的牛奶产量、消耗量和贸易量将迅速增长。研究结果 显示，中国的未加工牛奶的产量增长非常快，但人均产量依然太低。 所以，这项研究宗旨是：估计中国牛奶生产量和消费量的发展，对决定 中国消费者购买乳制品的因素进行分析，评估乳制品( 新鲜牛奶，酸奶， 乳酪) 在中国人之中的消耗量水平，搜寻人们获取乳制品的信息源。 近年，中国对奶制品的人均消耗量增加了许多，特别是在鲜牛奶 的消耗上，但对乳酪、黄油的消耗量依然是恒定在1 9 9 5 2 0 0 5 年期间 的水平上。市区是中国乳制品的主要消费者市场。结果显示，中国 在以后的7 8 年将是乳制品的纯进口商。我们的研究还发现了影响 中国人购买何种乳制品的一些决定性因素。根据中国人对乳制品( 新 鲜牛奶、乳酪，酸奶) 的现有消费量情况，我们发现老人是新鲜牛奶的 主要消耗群体。而且由于中国的饮食习惯，乳酪并不为大多数中国
