琼脂。稳定剂的 种类和浓度对l 值影响不大，而种类对a 值和b 值有影响。活菌数量随浓度的增大而增大， 添加剂的种类对其也有一定的影响。从质构、感观分析的结果中可知：含三种植物油的酸 乳中最佳稳定剂的添加量为：低甲氧基果胶0 2 、琼脂0 2 、明胶o 3 。 再次，还研究了在钆5 贮藏条件下，最佳稳定剂添加量的酸奶的贮藏效果。除添加 果胶的酸奶外，s t s 有明显的油脂味，含琼脂的则有琼脂昧。 最后，在最佳稳定剂添加量的基础上，研究了橄榄油酸乳的凝胶强度，超微结构及其 流变特性、凝胶强度、s t s 值和超微结构之间有着紧密的联系。增大凝胶的强度可以提高 酪蛋白网络结构的致密性，降低脱水收缩性。在s e m 中，可观察到超微结构发生了明显 变化，结果是，弹性模量( g ) 和粘性模量( g ”) 随频率的增加而增加，且g g ”，说
