Restaurant EnglishSection I Vocabulary & Cultural Notes:1. 欧美人午餐和晚餐的菜单相差不多。但是由于午外食用时间较为短暂,因而产生了各种商业午餐、快餐,既省时又方便。晚餐则是正餐时间,可以慢慢地品尝各种美食,通常比较正式,也比较讲究。午餐和晚餐通常包括下列五项:(1) 开胃菜Appetizer (= Starter)(2) 汤Soup继开胃菜之后端上来的第二道菜即是汤。一般餐厅供应清汤(clear soup)和浓汤(thick soup)两种。喝汤的动作是将汤匙由内向外,慢慢自碗中将汤舀起。(3) 主菜main course法语叫entre,美语称为main dish,通常都是肉类及海鲜类。(4) 甜点Dessert包括水果、冰淇淋、布丁、乳酪等。比如各种tart(果馅饼,小圆饼)和pastry(酥皮糕点)。(5) 饮料Beverages包括咖啡、红茶、可乐、牛奶、果汁、啤酒等。如果是alcoholic beverages或 liquor就是指含酒精成分的饮料,像威士忌、白兰地、琴酒等(酒精成分超过40的烈酒称为spirits)。2. 酒在西餐中是不可或缺的饮料。欧洲各国如意大利、法国、西班牙、葡萄牙等,对酒尤其讲究。用餐前有开胃酒(aperitif),用餐时则佐以葡萄酒,用餐完毕后还有餐后酒,不但正规会餐时如此,就连平常用简餐时,也有这种习惯。(1) 餐前开胃酒 (aperitif)开胃酒又叫餐前酒,大约在餐前30分钟左右时饮用,通常为了增进食欲,都饮用一些较为强烈的辣味酒。正规的开胃酒以雪莉酒(sherry)和苦艾酒(vermouth)最具代表性,有些人也喜欢以鸡尾酒(cocktail)来充当饭前酒。男士喝的餐前酒一般是马丁尼(Martini),而女士一般喝雪莉酒,这是一种非常清淡的白葡萄酒。不太能喝酒的男士一般选择鸡尾酒。即使你是一位滴酒不沾的人你也应该点一杯矿泉水、可乐之类的饮品,千万不要手中空空如是,那是会令人尴尬的事,也会使你自己有失风度。 (2) 佐餐酒 (dinner wines)用餐时多半饮用葡萄酒。葡萄酒大致可分为红、白和中间色三种,各有其独特的香味,所以有些料理并不对味,至于如何选择就要配合所点的菜肴了。一般白葡萄酒通常佐配鱼虾海鲜类,红葡萄酒和含有辛辣味的白葡萄酒则适宜佐配牛肉、猪肉等肉类食物。中间色的粉红葡萄酒(rose)可以佐配任何食物。(3) 餐后酒 (after-dinner drinks)餐后酒以白兰地、波多酒(Port)和利口酒(liqueur)最具代表性。波多酒多在吃甜点或水果时饮用。利口酒是一种烈性的甜酒,可以清口、帮助消化,喝的时候要一点一滴,慢慢品尝欣赏它清香的味道。男士们饭后则尤其喜爱啜饮各种香而不甜的名贵白兰地。 well-done 火候熟透,全熟 medium 火候老嫩适度(七分熟)rare 火候略熟、嫩(三分熟) medium rare 五分熟raw 生的 tender 嫩的dry wine 不含甜味的葡萄酒 portion(食物的)一份,一客prawn 对虾,大虾 shrimp 小虾rye 黑面包 salmon三文鱼,大马哈鱼seasoning 调味品 curry 咖哩;用咖喱烹调的饭菜 Section II Restaurant English:Part A Making OrdersA.
