tobacco was Nicotiana rustica a hybrid that is native only to the western slopes of the Andes 6 From here its cultivation and use spread into North America at about the same time as the cultivation of sensuality and the desire for great freedom from age bound habits in the West combined with the inherent sensual concept of Chinese food always quick to satisfy the taste buds that is at the root of the sudden and phenomenal spread of Chinese food throughout the length and breadth of the Western World 正是西方这种对感官享受需求的增长和从积习中解放出来的渴望 再加上中餐 本身注重色 香 味的概念 中餐总是能很快满足味蕾 成为中餐突然迅猛地 在偌大西方世界所向披靡的根本原因 4 They 人对待吃的不同态度 西方人上餐馆时 他们最关心的往往是找一张好餐桌 更确切地说 找一个可以看见别人 又能让人看见的位置 然而 中国人上餐 馆时 他们则喜欢找一间公共场合的人所看不见的小房间 这种差异的原因在 于 前者在用餐时由于有社会交流而感到惬意 而后者则主要从品尝食物中得 到快乐 许多人认为 一顿传统的精美中国餐准备工作极其细致 据说 备料和配 料占实际准备的大约 90 的工作量 烹调本身则仅仅占大约 10 的工作量 既 然准备如此精细 那么享用也应该与之匹配 一顿正宗的中国餐宴可以长达三 个多小时 难怪有人说 它恰似一个宗教仪式 Exercises for integrated skills I Dictation In the Chinese culture the whole process of preparing food from raw ingredients
