But the majority of people still misunderstand the food additives. The purpose of this paper is to establish a correct understanding of food additives and protect consumers right to know. This article based on the understanding of domestic and international research on food additives; the conclusion is that food additives occupy an important part in food industry. And the article also put forward some suggestions. I hope the misunderstanding on food additives can be removed.Key Words: Food additives, Safety, Misunderstanding, SuggestionsFood additives are not an uncommon word for people, but a few people really understand it. The food additive is a kind of chemical synthetic or nature substance which is used to improve food quality, prolong the time of food preservation, make it good for food processing and increase food nutrient. At present, China has 23 categories of food additives, and more than 2,000 varieties, including acidity regulator, anticaking agents, defoamers, antioxidants, bleaching agents, leavening agents, coloring agents, color fixative, enzymes preparation, flavor enhancers, nutritive fortifier, preservatives, sweeteners, thickener, spices and so on.Peoples misunderstandings on food additives mainly attribute to usage of industrial nitrite and the event of current lean meat powder. In fact, industrial nitrite is not the same as the nitrite which is used in food additives; besides lean meat powder does not belong to food additives. The food additive plays a significant role in food processing and it is unable to be replaced. Most food contains additives. To use food additives in right way will not harm peoples lives. Now our country has a long distance with developed countries on the producing and using quantity of food additives. But with the development of food industry and the improvement of living standard, the type of food additives will be increased, the available range will be extended, and food additives will be understood and accepted by more and more people.In the U.S., more than half of bread bakers add 0.5% to 0.75% of calcium peroxide in bread to make it feel soft, not only taste good, but also increase the nutritious source of calcium. Looking at the whole world, the foreign countries seem to have very few safety problems, because the amount of food additives are strictly controlled especially the European countries. Food additives can keep the taste, shape and color of food and dont do harm to humans health. Absolutely, our laws and regulations in food safety are inadequate, that cause the result: a large number of illegal use of food additives, and the violation of consumers interests. We should learn from European countries.Food safety standard arouses the attention day by day in the international food trade. The food standard of security of European Union has limited the export food of China, and all the food additives in export food are in the limitation. But the domestic food is not as the same standard as export food. Whats more, some sellers put label on the food which said “No Preservative”, thats not true, and would confuse consumers judgment. I suggest all the food additives could be labeled on the list of ingredients by sellers. And the consumers can make the list as reference, and then choose the satisfactory goods. In addition, in order to protect consumers right to know and improve peoples knowledge of food additives, our country should enact a document which explains the function of food additives in details. As long as our country insists on the following points, the food safety problems can be solved. First one is to build a full system of food safety regulation; another one is to crack down on the crime severely and enhance the awareness of consumers rights; the third one is to improve the legal protection mechanism; the last one is to cultivate technical talents, and improve the level of security.The Literature ReviewAccording to Wen Liwei(2002), Xu Yongfeng(2004) and Ze Kai(2011), food additives are very important and its necessary to add them in food in order to keep food for a long time. People are easy to misunderstand food additives. To abolish the using of some food additives is not wise. Some illegal sellers add toxic substance to make food and then consumers would think what the sellers added is food additive. What a pity! Sun Ting(2011) analyzes the condition of food safety, she has pointed out some reasons and made a forecast about food safety problem then gave advice.Based on studies of Zhao Yaling & Wang Dianhua(2010), Le Donne Cinzia, Piccinelli Raffaela, Sette Stefania, Leclercq Catherine(2011) and Holtorf, Marc L.1 & Sachs, Gunnar1(2010), European Union has the most strict laws and regulations about the right use of food additives. European Countries not only use these regulations to limit themselves, but also to limit other countries who have trade relationship with them. In Yuan Zhong and Zhang Weis study, they have discussed the influence of food additives and the relationship between food and food additives.
