23、egs are crisp, turn over onto the breast.两侧的腿都煎好后 翻到鸭胸那一面I'm just now caramelising the breast,我现在要把鸭胸煎成焦黄色just for one minute.一分钟就够了So now, these ducks are ready to go in the oven.现在 将鸭子放入烤箱中180 degrees for ten minutes for medium rare.设置到180度 烤到三分熟要十分钟30 minutes for medium烤到五分熟要三十分钟and for well
24、done, well, as long as you want to.至于全熟嘛 你想烤多久就多久I'm going to show you now how to prepare a celeriac puree,下面我要展示如何料理块根芹泥which will accompany the wild duck.这是用来搭配野鸭肉的Grown for its root rather than its stalks and leaves,块根芹的食用部位是根部 不是茎或叶celeriac is a variety of celery.它是芹菜的一种It's a perfect al
25、ternative to potatoes.是最好的土豆替代品Wonderful. That celery flavour.太棒了 这芹菜的清香Nobody gives me a commis,副手不在so I've got to peel my own vegetables.我只好自己动手削皮You cannot do it up here,别从这里开始you need a small knife to go around.要用小刀顺着皮来削Once peeled, chop the celeriac into equal sized cubes.削好后 将块根芹切成相同大小的块状S
26、o they all cook in the same time. Voila.一起放到锅内煮 瞧Poach the celeriac in milk with a pinch of salt.块根芹入锅 放少许盐 用牛奶煮Tres bien.很好The gas here has gone off again.煤气又灭了God!天啊Sorry.不好意思I love it. I love it because everyone's involved.我喜欢这样 大家都来掺一脚It's crazy!太疯狂了Simmer gently.文火慢炖Never any fast cooki
27、ng 不要快速烹调because fast cooking overcooks the outside因为快速烹调会让食物外部过熟and doesn't cook the middle.而内部却不够熟So slowly, let the heat permeate.所以慢慢来 让热量慢慢渗透进内部So now we have 20 minutes for ourselves where we can have a nice现在我们有二十分钟的空闲时间glass of water or maybe a little espresso.可以来杯水或者一杯意大利特浓咖啡That would
28、be very nice.很享受的The celeriac is ready.块根芹煮好了What is simmering away is the moisture,现在要凉一下 放走水汽I don't want too much moisture, OK?我不想要太多水汽So I'm going to let it simmer away for five minutes. 所以要把它放在这晾五分钟Go away.水汽快走Of course you can do that puree in advance and reheat it,当然你可以先准备好泥酱 吃时候再加热un
29、like mashed potato, which cannot be reheated.和土豆泥不同 块根芹泥可以再加热This one does because all the starch is good,因为它的淀粉品质很好less sticky, much smoother.不是很粘 而且更细腻After the steam has gone, 水汽放走后puree the cubes in a liquidiser.将块根芹倒入搅拌机中We're going to use a bit of the milk here.再加一些牛奶Tres bien. 很好Very smoo

32、t here, you see?看到了吗That is lovely, just very simple and lovely.很美味 简单又美味Alongside the roast duck and celeriac,除了烤鸭和块根芹泥Raymond's serving a blackberry sauce.还有雷蒙德调制的黑莓酱It's a lovely sauce, 酱的味道很棒which you can easily make in your own home very simply.在家里做也很容易A little bit of clove,一点点丁香a bit o
33、f juniper berry.一点杜松子Spice up blackberries with a simple marinade.用这些简单的调料来给黑莓提味So with my clove, one single clove,加入丁香 只需一瓣two juniper berries,两个杜松子tiny bit of bay leaf and a sprig of thyme.一点点月桂树叶 还有百里香A dash of sugar撒些糖and it takes on all of those flavours and believe me,所有的这些味道都会融入酱中that process
