werethenstoredunderdifferentconditions-someatroomtemperatureandothersin

refrigeration-fortwoweeks.

Duringstorage,adetailedmicrobiologicalevaluationwasconductedtoquantifytotal

viable(活菌)countsandspecificspoilageorganisms,includingPseudomonasspp.,Clostridiumspp.,

andProteusspp.PhysicochemicalanalysesmonitoredchangesinpHandwateractivity,

whilebacteriagrowthwasassessedduringstorageatroomtemperature.Thescientists

discoveredthattheCNSL-treatedmeatshowedsignificantlylessbacterialgrowththan

untreatedmeat.Theeffectwasstrongestathigherconcentrations,witha2.0%solution

providingexcellentprotectionwhilemaintainingmeatquality.Evenatroomtemperature,it

effectivelydelayedthemeat'ssouringprocessandreducedbacteriagrowth,helpingthebeef

stayfresh-lookinglonger.

Theresearchersnotethatfurtherstudiesareneededtounderstandwhethertheliquid

affectsthetasteandtextureofthebeef,andhowitmightbecombinedwithmodern

packagingforevenbetterresults.Still,thisstudyopensawindowintonature'sownwayof
