substancesthatcanfightbacteriaandpreventdecay(变质).Whilethisdarkliquidhasbeenstudiedforuse
inindustrieslikepaintandmedicine,itspotentialforpreservingfoodhasnotbeenfullyexploreduntilnow.
ThescientistsdesignedacarefulexperimenttotestwhetherCNSLcouldhelppreservebeef,oneofthe
mostwidelyconsumedmeatsglobally.Theyappliedtheliquidtobeefsamplesatdifferentconcentrations.
Somemeatwasleftuntreatedascontrols.Thesampleswerethenstoredunderdifferentconditions—some
atroomtemperatureandothersinrefrigeration—fortwoweeks.
Duringstorage,adetailedmicrobiologicalevaluationwasconductedtoquantifytotalviable(活菌)
countsandspecificspoilageorganisms,includingPseudomonasspp.,Clostridiumspp.,andProteusspp.
PhysicochemicalanalysesmonitoredchangesinpHandwateractivity,whilebacteriagrowthwasassessed
duringstorageatroomtemperature.ThescientistsdiscoveredthattheCNSL-treatedmeatshowed
significantlylessbacterialgrowththanuntreatedmeat.Theeffectwasstrongestathigherconcentrations,
witha2.0%solutionprovidingexcellentprotectionwhilemaintainingmeatquality.Evenatroom
temperature,iteffectivelydelayedthemeat’ssouringprocessandreducedbacteriagrowth,helpingthebeef
stayfresh-lookinglonger.
Theresearchersnotethatfurtherstudiesareneededtounderstandwhethertheliquidaffectsthetaste
andtextureofthebeef,andhowitmightbecombinedwithmodernpackagingforevenbetterresults.Still,
