In 1943, when Jews were being killed or rounded up into concentration camps, Zofia sent word through a friend asking Israel and his young wife Frania to come to her farm.The Polish woman had little to offer, but she could shelter them.Her action involved extreme danger.People could be shot for harboring Jews.“I felt so much pity for them it was impossible to betray (背叛) them,” Zofia says in the documentary So Many Miracles, made by the Rubineks only child, Saul, a Canadian actor and director.She sheltered the Rubineks for almost two and a half years.In 1986, Saul returned to Poland with his parents, who were going back for the first time in 40 years, to visit Zofia. But we do chew and digest them.Thats how the body is able to break down the hard cell walls of plants to approach their vitamins, notes Anitra Carr. She studies the health effects of vitamin C at the University of Otago in Christchurch, New Zealand.Ambers pepper results are similar to other scientific findings, Carr says. “The amount of vitamin C in foods generally decreases with cooking,” she notes.The vitamin can go into the water in which peppers are cooked.Heat and other chemical processes can also break it down.But we might still get more vitamin C from some cooked vegetables than raw, Carr says.How?
