Check personal hygiene & Prepare service napkinClean and dry handsService napkin is clean, well-pressed2. Select wine openerWine opener: not rusty, clean and knife is sharp3. Collect wineCollect wine as per guest orderwine label not tornWine is at correct temperature (18 20c)Bottle is clean4. Present wine to guest / hostPlace 1/4 folded lengthways service napkin in left palmStand wine bottle on napkinBring napkin up the back of wine bottleHold the bottle neck top with right hand, support base with left palmShow the wine label e.g. “Your Cabernet Sauvignon Robert Mondavi 1992, Sir/Madam.5. Place the winePlace wine on edge of tableEasy spot for you to open the wineNear the hostHang it over left arm6. Hold the bottle neckHold firmlyEnsure bottle stays firmly7. Cutting the foilPlace the knife about 0.5cm down the mouth of the bottleClockwiseRound the back of the mouthIn one full movementFirmly and do not turn the bottleDo not leave foil uncutPlace the foil in your pocket8. Clean the exposedWith service napkin, remove any trace of dirt, mould9. Open corkscrew and supportOpen corkscrew and support grip. Between thumb and index finger, firmly by the neck 10 Insert corkscrew. Point corkscrew at the centre of the corkPrick tip of cork slightlyScrew 3/4 way into cork with a gentle force Ensure all the rings of the corkscrew are fully turned into cork11. Extract corkRest the support grip firmly on mouth of bottleLift the opener gently upwardsEase cork upwards slowly and gently until cork is out of the bottleRemove cork from corkscrew12. Present cork to guest / host Hold the tip of the cork with service napkinPresent to guest on his rightPlace on table in front of guest/host for guest/host inspection. Say “excuse me, Sir/Madam, for your inspection”Use service napkin to remove traces of cork or mould13. Wipe the mouth of the bottle Check that the temperature is correctCheck the quality of the winePour a mouthful to the hostEnsure the neck of the bottle does not touch the glass while pouringWine label faces the guestPour slowly and carefullyFinish pouring with a twist of the bottleTwist bottle 1/4 clockwise to catch the last dropWait for acknowledgement from the host14. Wine tasting Ladies first, host lastServe from the right (whenever possible)Not more than 1/2 glass full for wine to breatheFor guest to appreciate the full aroma of the wine15. Confirmation from guest / host Ensure the neck of the bottle does not touch the glass while pouringWine label faces the guestPour slowly and carefullyFinish pouring with a twist of the bottleTwist bottle 1/4 clockwise to catch the last drop 16. Serving the winePlace bottle in the centre of tableEnsure label is facing the hostFold service napkin to 1/4 size & leave it beside bottleSay “Enjoy your wine, Sir/Madam”Leave with a smileNote: Always return to top up the wine for the guests- End 程序:1. 检查个人卫生&准备服务口布 清洁,擦干双手叠好干净完整的餐巾2. 选择开酒刀开酒刀不生锈刀口锋利3.根据客人要求选葡萄酒葡萄酒商标清晰红葡萄酒是常温的(18-20C)瓶身干净4.将1/4叠好的服务餐巾放在左手掌 将瓶身靠餐巾站起来, 将餐巾垫在瓶身后 用右手握瓶颈,帮助左手掌握瓶 向客人展示,并报酒名,如,先生/小姐,您的Cabernet Sauvignon Robert Mondavi 19925. 把葡萄酒放在餐台角上 对你开酒方便的地方 主人附近 餐巾挂在左手上6. 稳固的握住 保证瓶身稳固7. 切割铝箔将刀放在离瓶口0.5cm的地方顺时针转动来回转动动作充分运动稳固的不要转动瓶身不要留下未切割的箔纸把箔纸放进口袋8. 用餐巾擦掉灰尘,霉菌9. 打开酒刀 打开瓶塞支撑把手用拇指,食指稳固握住瓶颈10. 转孔器在木塞中心定点微微刺进木塞轻轻地转入木塞处确保整个转孔器充分转入木塞11.拔出瓶塞 稳固的握住瓶口慢慢向上拔确保木塞慢慢拔出瓶口把木塞从酒刀上除去12.给客人展示瓶塞 用餐巾握住木塞从客人右手边递给客人放在客人/主人的正前方让客人/主人查看, 说:先生/小姐,请您看一下用餐巾擦掉灰尘,霉菌13.擦拭瓶口检查温度适宜检查葡萄酒的质量向主人杯中倒一口葡萄酒倒酒时,确保瓶颈不碰到酒杯.酒的商标面向客人小心,慢慢倾倒. 倒完后,转一下酒瓶向顺时针转下,不漏出葡萄酒等待主人的
