The target population is n Food production employeesn Food service employeesn Stewarding employeesProgramme Objectivesn The aim of this Programme is to provide you with the necessary Knowledge and Skills to be able to work with food safely. n By the end of today you will be able to demonstrate you understand the principles of Basic Food Safety and you will be able to explain how safe working practices can reduce food complaints and avoid poisoningRecommended Group SizeThe easiest and most successful ratio for this programme is 12 participants broken into groups of 4 participants per table. The style of this course is very much one of work shop and idea development, as well as information giving. If the group is too large, then certain disadvantages start to affect the learning outcomes:QMore dominant people are able to become more active, and less active people are more inhibited and less likely to contribute. Therefore the group becomes dissatisfied with resultsQThe atmosphere is less intimate, and the tutor becomes the central focus. This makes more demands on the tutor, and less on the group to make use of their skillsTutor StyleThe programme has an emphasis on development of knowledge and understanding Food Safety. For this reason, there is a quantity of time built in for delegates to be able to apply the principles being taught. If the order of running is changed to suit your operational requirements, please try to bear in mind that the style is based on “one skill at a time”. Therefore, after giving explanations and input on any area, then do leave some time for practice as soon as possible following the explanation.The style of this course is highly participative, and with this style, the motivation to learn and ability to learn are greatly enhanced. This means that your role as tutor is also one of a facilitator of discussion and group work, this style develops more understanding than just than simply giving information. Your skills of helping groups to organise themselves and of giving feedback will be in constant use throughout the programme, as well as the skills of using recognised group training techniques.At every opportunity, with the theoretical input, link this with examples to the real work situation, and encourage delegates to do the same. This helps with understanding on the programme, and also with the application afterwards.Please also refer to facilitator role section at the back of this section.Section Two Practical Arrangementsn Before the Programmen Room Layout and Equipmentn Powerpoint slidesBefore the programmeAfter deciding on the delegates to attend, and before the programme begins, the results will be much enhanced if you:CAsk the manager/supervisor of the individual to give a clear briefing on:n Why he/she has been selected to attendn How they will be required to apply the skills that they learnn What support hey will receive back in the workplacen What will be expected of them from the programme, and how they will be monitored & reviewedCEnsure that the delegate has a clear understanding of the how food safety impacts on their daily role.CGive clear information on all per-course arrangements, including:n Programme outline, objectives and contentn Dates and timesn Venue/location with directions if necessary. n Details of domestic arrangements, as necessaryA full set of joining instructions is included in the next section of this manual and should be amended to suit the delegate audienceRoom Layout and Equipment RequiredObviously, with so many different operating units and locations, it is not realistic to impose a standard room layout. The course does demand some moving around and plenty of group work however, and so it is worth ensuring that you are working in a large enough space to make this possible.To ensure comfort and successful running, you will need:CFlipcharts, plenty of pens, ( one at each table and one at the top of the room for the tutor)CData projector and screen CCopies of the handouts for each delegateCSpare paper for notesCWall putty for fixing group work resultsPowerPoint slidesThe slides have been put in the format of a Powerpoint presentation. As a PowerPoint presentation should you have access to a screen and LCD projector and are familiar with using powerpoint The presentation has been saved as Microsoft Office PowerPoint 2003 presentation. Feel free to customise these slides by making them relevant to your hotel.Section Three Delivering the Programmen Tutor Support and Materialsn Delivery optionsn Managing Syndicate Groupsn Incorporating the WorkbooksTutor Support and MaterialsFor each session, there are full notes containing:n Trainer notesn Session plan with introduction, development, consolidation frameworkn Master copies for power point slidesn References to workbook exercisesWhere lists of information for flipchart work appear, they are not intended to be definitive lists, but to act as a guide to the kind of issues that the group should be exploring at that point.It is important to relate learning points as far as possible to real situations for the delegates and where appropriate it is suggested that real examples be drawn out from the group.Material included in the supporting workbooks should provide sufficient underpinning knowledge so delegates do not have to take a lot of additional notes during the sessions. However, if they wish to make notes, please encourage them to write in their workbooks.Many exercises are contained within the programme and reference to these are made in the appropriate session notes, these exercises may be used as individual, pairs or the basis for group exercises as appropriate. Delivery GuidelinesPlease feel free to use the session notes to suit yourself this programme like all others will become easier with repeated running.Session times are approximate, as the group will often decide and dictate where they require time to be spent in the syndicate exercises on the case study work.The programme is designed to be run over one day, with a test at the end.During the sessions, the groups may need to develop a discipline for getting straight into the syndicate work, and finishing at roughly the same time as each other. A fairly firm but gentle guidance for the first exercises will pay dividends through the programme. In other words, set the guidelines for groupwork early on clear brief, timescale, reporting method (on flipchart, etc, elect spokesperson), keep an eye and gently eliminate extraneous chatter and topics, and encourage all-round participation. Do not let the stronger group members dominate early on, - try and do this at the beginning, as it is very difficult to alter their behaviour later on, and it is frustrating for you, and for them, if one group consistently finishes first, or way ahead of the others.It is recommended that you keep the same groups for all work on the exercises, and think about how you are going to split them beforehand. If you know the individuals prior to the programme, then it is easy go for a mix of experience and personalities. If the group is new to you, then keep this in mind during their introductions mix them up according to experience and apparent personality.For any other syndicate exercises and pairs work, then it does not matter how you split them, and it will add variety to their experience if you vary them a little.Managing Syndicate GroupsFeatures of a Syndicate groupMuch of the success of this and similarly styled programmes will depend upon the strength of the work carried out within syndicate groups. Therefore, it may be helpful to refresh our ideas on running syndicates.A syndicate is a small group, ideally 3 or 4, but maximum 6 or 7, working together to carry out an exercise, answer questions, develop ideas, etc. The trainees or delegates take much of the responsibility for their own learning, and no formal leader is appointed by the trainer/tutor, although he/she does have the responsibility for setting an achievable task. As with all learning and development methods, there are advantages and disadvantages involved.The AdvantagesCInformation is thought out by learners and will be remembered better than information which is toldCLearners have a greater commitment to the learning outcomeCIndividual attitudes and opinions will be far more easily changed by the group, than by the tutor alone.CParticipation by all is encouraged by informality and small groupsCThe risk of being shown up, or singled out for shy individuals is reducedCThoughts are more stimulated and depth of discussion is greaterCMaintains involvement with change of environmentCGives tutor a chance to catch a breathThe DisadvantagesQGroup may miss the pointQThey may spend too much time on triviaQTutor may lose some controlQDominant characters may mislead the restQMay be expensive in timeSelection of Syndicate MixAvoid any clashes of personality, and for this particular programme, a mix of jobs and disciplines is goodMix the group as much as you can by thinking about the individuals putting shy, quiet people with others who will encourage them. Beware of the manager/subordinate mix, better to keep them in separate syndicates.Balance experience/inexperience, weak and strong and enthusiastic with the “not so sures”Briefing Syndicate GroupsBe specific, ensure that you are clear on what the objectives areBe brief and to the pointPreferably brief them in writing. (All briefs for this programme are either reproduced on PPT, or given as handouts). Ensure that they are clear on instructions before commencing workBe specific about feedback requirements eg. on flipchart, elect spokesperson etc.Brief on where to work, and how long to takeInterventionCheck with them soon after starting that they understand and are on the right linesDo not be afraid to correct them if they are going wrong often this can
