Sam Chee works on a very different type of farm, in the center of the Canadian city of Toronto. “We grow fruit, vegetables and herbs,” says Sam. “But not many people know the farm is here. You cant see it from the street. Were on top of an office building, 50 meters above the ground.”Rooftop farming is becoming popular in cities like Toronto, New York and London. The roofs of buildings are often just wasted space, but this space can be used for growing good fresh food, right in the middle of the city. Sam explains how it works. “We grow everything in big boxesthere are hundreds of them. We catch rainwater to water the plants when the weather is dry.”The rooftop farm where Sam works belongs to a restaurant called Green Garden, on the ground floor of the building. The farm produces about half the restaurants fruit and vegetables. Sam believes that the rooftop farm is what makes Green Garden special. “We help to keep food production local. We dont need to transport this food from anywhere and that saves energy. Its better for the environment.”The food from the rooftop is fresher too. “When the fruit and vegetables are ripe we can pick them and use them right away. They taste better when theyre really fresh,” says Sam. “I hope that there will be more rooftop farms in the city soon. It could be the farming of the future.”18 . Researchers say letting your hot drinks cool off could help you avoid some kinds of cancer. Researchers at the International Agency for Research on Cancer (IARC) found evidence that drinks at temperatures above 65 degrees Celsius, when swallowed, can cause cancer of the esophagus (食道). The researchers examined findings from other studies where tea and coffee were often served at 70degrees Celsius or above. Those studies were completed in Iran, China and South America. In developed countries, health experts have linked esophageal cancer to smoking and alcoholic drinks. However, this form of cancer is more common in areas where people drink beverages at very high temperatures. In Europe and the United States, many people drink coffee and tea at temperatures around 60degrees Celsius. And they often add milk which lowers the temperature considerably. However, teadrinkers in Iran and matedrinkers in South America often enjoy their beverages at closer to 70degrees Celsius. The researchers note that South Americans not only drink their mate very hot, they also drink it through a metal straw. This sends the scalding liquid directly into the throat. The findings, however, are good news for coffee drinkers. In 1991, the World Health Organization listed coffee as possibly carcinogenic (致癌的). WHO officials have since changed their position on that listing. They now suggest that the temperature of your hot drink is a greater risk factor than the actual drink itself. The results suggest that drinking very hot beverages is one probable cause of esophageal cancer and that it is the temperature, rather than the drinks themselves, that appears to be responsible.23 .
