摘要 本文采用二苯代苦味酰自由基( d p p h ) 法对卢旺达红茶与中国绿茶和乌龙茶 提取液的抗氧化活性进行了比较研究。采用热水法、甲醇法和乙酸乙酯法三种方法 提取茶叶中的活性物质，其中热水法的提取率最高，达到4 1 5 7 士0 0 1 。以吸光度 值为指标，考察了三种茶提取液清除d p p h 自由基的能力，以抑制率表示。绿茶、 乌龙茶和红茶的抑制率分别为4 2 ，3 5 和2 3 。提取液的浓度越高清除自由基的 能力越强，三种茶清除自由基的能力顺序为：绿茶 乌龙茶 红茶。 采用福林一酚法测定了茶叶提取液中的多酚含量( 以没食子酸( m g g 干基) 计) 。绿茶、乌龙茶和红茶提取液中多酚含量分别为1 6 2 、1 4 4 和1 2 4m g 儋干基。 采用反相高效液相色谱( r p h p l c ) 茶叶中的酚类物质。流动相为甲酸：甲醇 ( 1 ：4 ) 分离，与标准物质对照进行定性和定量分析。发现茶叶提取液中含有六种 酚类物质，其中四种为酚酸，即单宁酸、阿魏酸、咖啡酸和原儿茶酸，酚类物质含 量范围0 5 3 2 4 ；另外两种为类黄酮物质。在热水提取液中含有3 2 4 单宁酸， 0 7 咖啡酸，1 4 原儿茶酸，1 4 芦丁三水化合物，0 6 无水槲皮素，1 8 阿魏 酸。 采用快速反相高效离子色谱法同时测定了提取液中的b 族维生素：硫胺素 ( v b 0 ，核黄素( v a 2 ) ，烟酰胺( v b 3 ) ，毗哆醇盐酸盐( v b 6 ) 及叶酸。由于氰钴 胺素( v b l 2 ) 的含量极低，所以进行单独测定。r p h p l c 的系统为l k b2 1 5 0 ， u v v i sm 4 8 4 检测器2 9 0 r i m 下测定v b l ，v a 2 ，v m ，v b 6 和叶酸；5 5 0n m 下测定v b l 2 用于测定的标准工作溶液的浓度为v m 2 0 0 m l ；v b 21 8 0g m l ；v b 3 1 2 0g m l ； v b 61 0 。0g m l ，结果表明所有茶叶都含有一些维生素，但是绿茶中维生素的含量比 红茶和乌龙茶高，测定结果为：v m2 5 m l ，v b 21 7 m l ，v m3 4 m l ，v b 62 4 m l ， v b l 20 8 m l 和叶酸0 5 9 m l 。 关键词：绿茶，乌龙茶，红茶，抗氧化活性，多酚类物质，维生素 a b s t r a c t a n t i o x i d a n ta c t i v i t yo ft h ea q u e o u se x t r a c to fb l a c kt e af r o mr w a n d a nh i g h l a n d sw a s c o m p a r e dw i t ht h a to fg r e e na n do o l o n gt e a sf r o mc h i n aa n dw a sd e t e r m i n e db yu s e o f2 ， 2 -
