榨汁机设计前期调查及现状1.1 论文选题的依据和研究意义 春夏秋冬,任何一个季节都有它的独特性,但对于热爱生活的人来说,无论是初夏季节还是如今的严寒冬日,“补水“都变得格外重要。可我们不能一个劲地喝水,而水果天天吃也会腻。何不尝试用榨汁机来榨取一杯新鲜的果蔬汁,既能及时补充水分又自然健康。 不知道有多少人注意到,市面贩售的所谓“果汁饮料”,往往有小字标注“浓缩还原”一水果浓缩液+水+糖+其他元素(防腐剂、色素、增稠剂等)的勾兑品。此类饮料,原果汁的含量大多在10%到30%左右,不但有大量的糖分和添加剂,而且在加工过程中往往伴随反复的高温杀菌,营养成分很难真正“保鲜”。自己动手,用榨汁机调制的蔬菜果汁,好处起码有三点:安全,自由,均衡。无添加剂,随时随地享用,搭配随心所欲,用来做饮料或者煲汤做菜都可以,没有过多的工业流程参与,最大程度上保留了营养成分。 榨汁机由诺蔓沃克博士(Dr. Norman Walker)发明于1930年的产品。这位博士因此而闻名于世,被誉为活性果汁机之父。 榨汁机主要功能是搅拌、榨汁等,榨出的果汁比买来的果汁营养丰富、味道更佳。因为操作方便、价格便宜、成品新鲜,并可以根据自己的爱好调整饮料成分,使得越来越多消费者选择用榨汁机自制饮料。 同样的,老人牙齿不好,营养摄取困难,比起综合维生素药片,鲜榨果蔬汁更加天然,保留营养更全面。1.2论文的主要内容、研究方法和榨汁机的现状1.2.1论文的主要内容本次设计的主要内容是离心式榨汁机的机械本体设计,主要负责水果榨汁机的壳体的设计。该设计本着简单、方便、实用、安全为原则,在材料上采用了PP材料(聚丙烯)和ABS(工程塑料),设计上弥补了以往各种榨汁机的不足,充分体现了自动化、高效化、小型化、简单化、安全化等特点:简单实用的榨汁机可以让老人和孩子轻松操作而且维护修理特别简单。我相信它在未来的市场上一定很畅销倍受消费者的青睐。1.2.2论文的研究方法在系统研究和总结了前人的成果与经验的基础之上,我采用带有锯齿的切削刀网粉碎,增强切削效果;超细的金属刀网稳定的旋转保证榨汁高效,出汁率高,采用单相串激式电动机用以提高转速、加大扭矩,保证榨汁机榨取果汁的质量,采用盖锁安全保护装置,保证安全,双保证措施让消费者更安全、更省心。1.2.3我国榨汁机的现状与发达国家的差距 榨汁机在我国的开发应用现状:我国的工业化加工起步于80年代,由于大规模果汁加工设备制造水平低,关键工序核心设备的制造水平与世界水平相差甚远。当时国产榨汁机的主要机型为螺旋榨汁机,其处置率只有60%左右,比国际先进水平低20%多,当时建设的果汁加工厂所用榨汁设备几乎全部进口,机型主要是BUCHER公司的液力通用榨汁机,除价格昂贵、配件费用高外,使用效果比较理想。由于原料生产规模、国内消费水平及企业经济实力等因素的共同影响,加上购买这些昂贵的进口设备,使我国刚刚起步的果汁加工业负重挣扎,步履艰难地维持了15年。再次期间,无论从果汁行业整体规模到设备的制造水平基本处于半停滞状态。进入90年代后,随着我国水果产量的大幅度提高和鲜销市场的逐渐饱和“卖果难”愈演愈烈。另外,由于我国经济实力的增强及人民生活水平的提高,果汁加工业又进入了一个新的发展时期。目前,果汁加工业正向产业化发展,一些规模大、起点高、集团化、面向国际市场的企业正在发展壮大,带动了我国果汁加工业向大规模工业化生产转变。而作为成套生产设备主机的榨汁机的制造水平仍旧很低,国内投资上千万的果汁加工厂的关键设备仍然全部依赖进口。由于具有处理量大、通用性广、出汁率高、产品质量好等优点,BUCHER的液力通用榨汁机及FLOTTWAG和AMOS的带式榨汁机是我国果汁加工厂选用最多的几种机型。 据资料显示:在发达国家家庭中与人们日常生活接触最为密切的厨房系列小家电像搅拌机、榨汁机、豆浆机、加湿机等新型小家电产品的拥有率已经达到80%以上而我国还不到10%,可以说:我国小家电正处于成长初期,大有潜力可挖,市场容量巨大,据专业人士预测小家电行业蕴藏着3500多亿元的市场。发达国家生产水果加工机械历史长,基础工业强,技术水平先进,用高新技术装备提高了生产率降低了能源消耗,增加了得率,减少了废弃物,保持了食品营养成分和风味,提高了食品品质。 随着经济的不断发展我国市场上也出现了各式各样的榨汁机,但大部分采用的设计理论、设计手段、设计方法、制造技术和检测手段落后;无论是从内在质量还是外观设计都远远不如发达国家。此外,国内许多原材料、基础件质量不稳定,直接影响了产品的整体质量。而且我国生产的水果榨汁机用于工业生产果汁的比较多,家庭实用型的却很少,且从性价比方面考虑也不是很让消费者满意,更主要的是我国目前使用的水果榨汁机通用性差、出汁率低,清汁果肉含量多。因此,要求出汁率高、果汁清家庭实用型榨汁机的研究与开发很受广大消费者的欢迎。1.2.4我国榨汁机的市场调查 21世纪人们对生活的质量不断的提高,对健康和营养的食品要求也就越来越高,特别是2008年奶粉事件和免检产品国家取消以后,很多人对购买的食品都不够放心,经过市场调查表明,现代的人们都形成了自制食品是最安全最卫生这样的观念,同时也享受到生活中的乐趣。每天一杯新鲜的果汁既填补营养也缓解了你一天辛辛苦苦的劳累。果汁不仅能增强您的体质更能让您生命长寿。特别是小孩老人,单单吃水果既不容易消化更吸收不到营养。在近几年来,各个领域的高级白领家庭当中已经陆陆续续出现了榨汁机,随着消费者观念不断的改变,榨汁机将会成为人们每一家庭中必用的饮品食具,所以此类产品将隐藏着巨大的市场份额和发展前景。市场处于导人期同咖啡机、面包机、煮蛋器这些西式小家电一样,榨汁机相对传统的生活必需品而言,更多的价值体现在人们对精致生活的追求上。榨汁机的价格普遍高于200元,一些知名品牌则要在500元左右,因此在中国市场一直都没有得到广泛普及。东菱凯琴董事长助理潘卫东透露,东菱早在上世纪90年代中期就开始生产榨汁机,由于当时国内市场需求较少,几乎都是贴牌出口。直到2000年左右,国内榨汁机市场初具雏形,东菱才开始开拓国内市场。资料显示,目前发达国家平均每户家庭拥有小家电产品超过40种,而在中国的一级城市中,平均每户家庭拥有的小家电数量也不超过5种,且一般多为热水器、吹风机这类生活必需品,榨汁机、咖啡机等“情趣产品”的占有率则更低。苏泊尔有关负责人透露,目前榨汁机在中国家庭中普及率大约只有5。潘卫东说,中国榨汁机市场目前仍处于导入期,一方面因为榨汁机进入中国市场较晚,而更主要的原因是国内消费水平还较低,消费者还没有形成饮用鲜榨果汁的消费习惯。另一专业小家电品牌ACA2003年进入中国市场的,据了解,ACA在中国的主打产品是电烤箱,榨汁机所占份额相对较小,并且目前以出口为主。由于电烤箱的销售旺季在秋冬季节,榨汁机则刚好弥补了企业夏季产品销售的不足。产品性能中国化“西方消费者普遍喜好功能单一而体积较大的产品,而中国消费者则倾向于选择集多种功能于一体且小巧的产品。”潘卫东说 “为了迎合消费者的需求,大多数企业的产品都是融合了榨汁、搅拌、碾磨等功能为一体的综合食品处理器,生产纯榨汁机的企业并不多。” 我们在卖场里看到,只有飞利浦的榨汁机全部为单榨功能的产品,其他几个品牌的产品,如苏泊尔,九阳、龙的,都是附带几个杯体的多功能食品处理器。销售人员透露:“一般消费者使用较多的功能是打豆浆和搅肉馅,单纯为了榨果汁的消费者很少。”然而多功能处理器的刀片更容易磨损,使用寿命要远低于单纯的榨汁机。 中国人的饮食习惯也是制约榨汁机市场发展的一大因素。“中国人早餐习惯喝豆浆而不是果汁。”家电卖场的销售人员说,“还有很大一部分消费者则习惯直接食用水果,认为将水果榨成汁饮用既麻烦还流失了营养。”我们了解到,目前榨汁机的消费群体主要有两类:一类是有孩子或老人的庭,孩子容易挑食而老人牙齿不好,自己榨果汁可以满足他们摄入足够的营养;另一类是追求时尚及生活品位的年轻人,榨汁机满足了他们崇尚个性口味的需求。随着生活质量的提高,消费者的心态由最基本的生活需要开始向营养健康的品味生活渡,这为榨汁机更加普及提供了可能。而无论是榨汁机还是食品处理器,目前都处于市场的导入期,对于大多数消费者而言还是奢侈品,企业如何引导消费者的消费观念至关重要。外资品牌遥遥领先根据中怡康2006年2JE全国市场监测数据显示,飞利浦以23、58的占有率在国内榨汁机销量榜上稳居首位。其余进入前十名的品牌皆为国内品牌,除了苏泊尔享有7,1的市场份额之外,其他企业的占有率则都在3 5 。另外,榨汁机杯身材质的不同,在很大程度上影响着价格的高低。杯身的材料一般有塑料和玻璃两种,玻璃材质的机器价格普遍在400500元之间。但记者在采访中了解到,玻璃材质的榨汁机目前并不多见,主要应用在商用机上,家用产品中,只有松下使用玻璃做杯身材料。据潘卫东介绍,目前家用榨汁机的市场更好一些,由于与商用机的区别只在于功率及容积,所以除了普通家庭购买外,很多小型冷饮店、酒吧也倾向于购买小巧便宜的家用榨汁机。据业内专家预测,中国小家电市场前景广阔,今后5年中,每年将有814的增长幅度,市场需求总额将高达35OO亿元。随着人们生活水平的提高,中国榨汁机市场会有很大的市场空间。1.3 榨汁机的设计1.3.1榨汁机的类型目前市场上各种品牌的榨汁机琳琅满目,但绝大多数榨汁机的主要结构、榨汁方式等都相似,通常大都采用外形、容积(搅拌容积或汁液杯的容积)和电机功率进行分类。按外形分,主要有座式、台式和手提式三种,目前以座式和台式榨汁机为主流机种,其实这两类榨汁机的外形比较相似,习惯称为台式榨汁机。按容积分,常见有05、0.6、07、08升等,容积大,一次可榨取的汁液多,但所需的电机功率也大,价格自然就较高。按电机功率分,主要有200W 、230W 、250W 、300W 、350W 等多种规格,普通座式和台式榨汁机常用200300W 的串激电机。1.3.2 榨汁机的现状分析 果汁工业化加工在国外已有百年的发展历史,已形成较完备的生产工艺,并开发有多种生产规模大、加工手段先进、产品质量优良的成套加工设备。 果汁生产的核心工序是榨汁工序,而榨汁机是榨汁工序的关键设备,榨汁机性能的优劣直接影响和决定着产品的质量、成本和加工企业的经济效益,其作用至关重要。因此,应客观、准确了解各种榨汁机的工作特点,以便做到正确、合理地选用,满足生产要求,以便尽快提高我国榨汁机的应用水平和制造水平,带动果汁加工业的发展,彻底解决种植业的原料加工问题。以下是常用的几款榨汁机:1)双锥盘榨汁机 双锥盘榨汁机的榨汁机理是利用两个母线重合的伞状锥体的啮合滚动,使进入啮合区域的果糊受压,果汁通过伞状锥体表面的滤孔排出。但双锥盘榨汁机压榨时作用时间短,对浆状物料的夹持性能差,排汁面积相对较小,排汁孔大,因此不适用于家庭水果榨汁。2)带式榨汁机 带式榨汁机的工作原理是利用两条张紧的环状网带夹持果糊后绕过多级直径不等的榨辊,使得绕于榨辊上的外层网带对夹于两带间的果糊产生压榨力,从而使果汁穿过网带排出。 带式榨汁机具有结构简单、工作连续、生产率高、通用性好、造价适中等特点,但带式榨汁机的主要缺点是榨汁作业开放进行,果汁易氧化褐变,卫生条件差;排汁不畅;网带孔隙易堵。3)压板式榨汁机 压板式榨汁机配置一个工作时旋转的圆柱形机筒,机筒的柱面上开有长缝用于汁液透过,机筒轴心装有一双向丝杠,丝杠上的转动带动机筒两端的圆形压板相向移动。压榨时物料用泵充入机筒内,压板由两端向中间移动挤压机筒内的物料,汁液通过机筒壁上的长缝排出,压榨结束渣从机筒中部的开口排出。但压板式榨汁机的压榨力较小,汁液的透过面积较低。1.3.3对新型榨汁机设计的一般要求目前我国的榨汁机普遍存在着出汁率低、出汁不清等问题,迫切需要进行结构改进和技术提高。因此,新型榨汁机设计必须建立在提高工作效率,增加出汁率,提高果汁质量的基础上对原榨汁机在先前技术上的改进。同时还要尽可能使操作简单满足不同年龄段的消费者,并保证操作的安全性。在经济合理的前提下考虑能够实现综合利用,一机多用。与其他榨汁机产品相比,要求做到坚固耐用,安全可靠,使用维修方便。在满足设计技术要求的前提下,尽可能提高产品和零部件的标准化、系列化和通用化程度。1.3.4 榨汁机的发展前景 同咖啡机、面包机、煮蛋器这些西式小家电一样,榨汁机相对传统的生活必需品而言,更多的价值体现在人们对精致生活的追求上。据了解到,目前榨汁机的消费群体主要有两类:一类是有孩子或老人的家庭,孩子容易挑食而老人牙齿不好,自己榨果汁可以满足他们摄入足够的营养;另一类是追求时尚及生活品位的年轻人,榨汁机满足了他们崇尚个性口味的需求。随着生活质量的提高,消费者的心态由最基本的生活需要开始向营养健康的品味生活过渡,这为榨汁机更加普及提供了可能。 据国家统计局资料,全国食品工业总产值1995年已上升为全国各行业之首。食品工业的可持续发展必然带动食品机械行业的发展,据统计1999年,全国专业食品加工机械约有2300多种已成机械工业的十大产业之一。据业内专家预测,中国小家电市场前景广阔,随着人们生活水平的提高,中国榨汁机市场会有很大的市场空间。7- 第二章 离心式榨汁机的总体设计方案及原理2.1 榨汁机方案的比较2.1.1高速离心式果汁机这是国内市场上最为普遍的果汁机类型,它的工作原理是利用刀网每分钟几千转的高速转动把水果粉碎,强大的离心力使果汁喷流入果汁杯,而果渣则甩进收渣桶。不同品牌型号的高速离心式果汁机也有材质、功率、进料口大小的区别,挑选时要注意选择功率大、进料口大的。优点:水果不用切得很小,榨汁速度快,榨一个苹果或者胡萝卜只需几秒钟,榨出的果汁清亮。缺点:噪音大;出汁率一般,榨完的果渣较湿,有些浪费,对于含水量较少的叶菜类或者特别软的水果几乎榨不出汁来。2.1.2 低速挤压式果汁机这种果汁机也受到很多人的喜爱,它的工作原理是靠内部的一根螺旋杆以每分钟80转的低速旋转,对水果进行挤压、研磨,果汁透过滤网流出,果渣从排渣口排出。优点:噪音低;榨比较脆的水果出汁率高,榨出的果渣很干,不浪费,对于叶菜类的出汁率也能令人满意。缺点:水果需要切成很小的块,再一点一点地填进去榨,费时间;榨出的果汁较稠,里面混有细小的果肉纤维,尤其是比较面的苹果,榨出来几乎就是糊糊。综合考虑,我选择设计高速离心式果汁机。本次设计的是一种集智能化,自动化、高效化、小型化、简单化、环保化为一体的较先进的高速离心式榨汁机。整个装置的动力源采用一个250W的单相串激式电动机,空载转速是19000r/min。2.2离心式榨汁机的工作原理 离心式汁机可对果糊产生很高的离心力,可更好地完成水果和蔬菜的榨汁作业。离心榨汁机的主要工作原理是先利用刀片将水果片粉碎,然后利用高速旋转产生强大的离心力来分离果汁和果渣,果汁透过镀钛刀网的金属网经过乘汁坐而流入果汁杯,果渣则被离心力甩出而进入果渣盒,它的工作流程是原料选果清洗榨汁破碎离心过滤果汁和果渣。47- 第三章 电机的选择与校核3.1 电动机的选择要求合理的选择电动机是正确使用的先决条件。选择恰当,电动机就能安全、经济、可靠地运行;选择得不合适,轻者造成浪费,重者烧毁电动机。选择电动机的内容包括很多,例如电压、频率、功率、转速、启动转矩、防护形式、结构形式等,但是结合榨汁机的具体情况,需要选择的通常只是功率、转速、等几项比较重要的内容,因此在这里介绍一下电动机的选择要求。电动机类型的选择要从负载的要求出发,考虑工作条件,负载性质、生产工艺、供电情况等,尽量满足下述各方面的要求:1)机械特性由电动机类型决定的电动机的机械特性与工作机械特性配合要适当,机组稳定工作;电动机的起动转矩、最大转矩、牵入转矩等性能均能满足工作机械的要求。2)功率电动机的功率,应根据生产机械所需要的功率来选择,尽量使电动机在额定负载下运行。避免出现“小马拉大车”现象或“大马拉小车”现象造成不必要的损失和浪费。3)转速电动机的转速满足工作机械要求,其最高转速、转速变化率、稳速、调速、变速等性能均能适应工作机械运行要求。4)运行经济性从降低整个电动机驱动系统的能耗及电动机的综合成本来考虑选择电动机类型,针对使用情况选择不同效率水平的电动机类型;对一些使用时间很短、年使用时数也不高的机械,电动机效率低些也不会使总能耗产生较大的变化,所以并不注重电动机的效率:但另一类年利用小时较高的机械,如空调设备、循环泵、冰箱压缩机等,就需要选用效率高的电动机以降低总能耗。5)价格低廉在满足工作机械运行要求的前提下,尽可能选用结构简单、运行可靠、造价低廉的电动机。3.2 电动机类型的选择家用食物加工用器具,如食物拌碎器、碎肉机、水果榨汁机、打蛋机、切片机等要求高起动转矩、高转速、体积小、结构简单,最适宜选用单相串激式电动机驱动。单相串励电动机可以交直两用,故也称为交直两用电动机,励磁绕组与电枢绕组串联,它们通过交流电时,两电流同时改变,电磁转矩方向不变,电机持续运转,其有较软的机械特性,起动性能好,转速高,过载能力强,调速性能较好,但不允许空载起动、换向火花大等,单相串励电动机主要用于电动工具和各种小型日用电器中,这类电动机的特点为额定转速一般超过12000r/min,短时定额或周期工作定额;结构特点为无外壳,而利用器具的外壳防护,电动机的防护型式为IP00,端盖简化成支架形式,通常用铸铝做成,依靠支架上的螺孔安装。电动机的功率一般在30250W之间。输出功率为90W以下,一般为自冷,90W以上采用轴流式风扇冷却。为了降低成本和减小噪音,常采用含油轴承。电动机的轴伸需与主机的驱动部件相配,一般采用斜齿轮轴伸。下表1为家用榨汁机常用单相串激式电动机的技术数据。表3-1 电动机额定功率的确定经与同类榨汁机相比较得出,当榨汁机正常工作,转速n达到8000r/min以上的时候,榨汁机的离心效果明显改善,又查资料知道植物细胞壁的纤维丝抗拉强度为810MPa,将各种不同功率的电动机进行比较,得出结论转矩大于200的电动机符合榨汁机的要求,根据公式3,其中P为功率,单位为W;为转矩,单位为;n为转速,单位为;将以上数据带入得: (3.1)我们可以选择单相串激电动机HC76-40型号,它的功率为250W,在正常工作时,它的转速达到10000r/min,扭矩达到240200,满足使用要求。所以我们选择的电动机的额定功率P为250W。3.4 键的强度校核图示带轮用平键与轴联接(图中只画出了轴与键,未画带轮)。已知轴径d=14mm,平键的尺寸为bxhxl= 5x5x14mm,传递的力偶矩为M=0.24N*m,键的许用剪应力=80MPa,许用挤压应力j=180MPa。图3-2 键的受力图剪切强度校核: (3.2) (3.3) (3.4) 挤压强度校核: (3.5) (3.6) (3.7)所以键满足所有强度要求。3.5 轴的强度校核依据设计要求,此电机轴属于心轴,只收到转矩的作用,不受弯矩的作用,故采用心轴校核方式进行校核计算,由以上计算可知: 图3-3 回转篮的设计榨汁部件的主要组成部分是回转篮。回转篮主要是由金属滤网、切削刀片以及与斜齿轮轴伸相配合的底部的斜齿。我们经过初步实验得出,回转篮上部金属滤网的斜度为的时候,可以很好的将果汁和果渣分离。回转篮的主要作用是在开启榨汁机后,电机带动回转篮高速旋转,榨汁机就是利用回转篮底部的切削刀片将水果片切成小碎片,然后在高速旋转的离心过成中将果渣和果汁分离开来,离心过程中果汁透过金属网进入回转圆腔流入果汁杯,果渣则被甩出回转篮而落入果渣盒中,我们还考虑了金属滤网的强度是否满足要求,以及切削刀片的选择,它与离心外壳的配合和它与电机驱动元件斜齿轮轴伸之间的配合,以及切削刀片的安装问题。图4-1 回转篮图4-2 金属滤网(放大10倍)4.2榨汁机壳体的设计4.2.1 榨汁机壳体材料的选择我们设计顶盖、果汁杯、果渣桶的时候,采用的材料是PP材料,pp材料即聚丙烯,聚丙烯也包括丙烯与少量乙烯的共聚物在内。通常为半透明无色固体,无臭无毒。由于结构规整而高度结晶化,故熔点可高达167。耐热、耐腐蚀,制品可用蒸汽消毒是其突出优点。密度小,是最轻的通用塑料。缺点是耐低温冲击性差,较易老化,但可分别通过改性予以克服。共聚物型的PP材料有较低的热变形温度(100)、低透明度、低光泽度、低刚性,但是有更强的抗冲击强度,PP的冲击强度随着乙烯含量的增加而增大。PP的维卡软化温度为150。由于结晶度较高,这种材料的表面刚度和抗划痕特性很好。PP不存在环境应力开裂问题。PP的熔体质量流动速率(MFR)通常在1100。低MFR的PP材料抗冲击特性较好但延展强度较低。对于相同MFR的材料,共聚型的抗冲强度比均聚型的要高。由于结晶,PP的收缩率相当高,一般为1.62.0%。聚丙烯具有良好的耐热性,制品能在100以上温度进行消毒灭菌,在不受外力的条件下,150也不变形。脆化温度为-35,在低于-35会发生脆化,耐寒性不如聚乙烯。对于聚丙烯玻璃化温度的报道值有一18qC, 0qC, 5等,这也是由于人们采用不同试样,其中所含晶相与无定形相的比例不同,使分子链中无定形部分链长不同所致。聚丙烯的熔融温度比聚乙烯约提高40一50%,约为164一170, 100%等规度聚丙烯熔点为176。由于以上特性,PP材料在食品机械中常用来制造需要承受冲击载荷的食品模具和托盘,具有良好的使用性能。例如,饼干机上的冲压模和辊印模,巧克力浇注成型托盘等。还可以用来制造其他各种饮料器具、容器、离心分离管、泵叶轮等。而设计主机外壳的时候,我们采用了工程塑料ABS,其优点是无毒、无臭、坚韧、质硬、刚性好,在低温条件下抗冲击和机械性能较好,使用温度范围大(-40100),因此应用广泛。设计刀网时采用镀钛刀网,不锈钢特细榨汁网,经过改良设计的不锈钢特细榨汁网,具有良好的刀切效果,效率持久,磨损率低,有效提高出汁率,出汁率达到35%。4.2.2榨汁机壳体结构的设计榨汁机的壳体主要包括推果棒,顶盖,不锈钢刀网,乘汁坐,主机外壳,盖锁,果汁杯,果渣盒。设计这些壳体的时候我们遵守了模具设计准则,同时考虑了模具的设计制造及加工问题。这样更有利于榨汁机的生产,并减少了制造成本。1)顶盖设计榨汁机的时候,我们主要考虑了进料口与回转篮之间尺寸的关系,这样可以使得水果片更彻底的切削破碎,使得物料的离心更加充分;然后我们考虑了端盖与离心外壳的配合问题,这样使得榨汁机的结构更加紧凑,更加家庭化,小型化。榨汁机的端盖和离心外壳构成离心室,分离果汁的离心运动便在离心室中进行,端盖上设有进料口,榨汁前,先将水果切成小片以便可以从进料口进入离心室中做离心运动,将水果片从进料口投入,然后用推料杆将水果片紧压在圆形切削刀片上,刀片将水果片切成碎片,我们称其为物料,这时物料在离心室中做离心运动,由于质量大的离心力也大,故随着离心运动的进行,质量大的随着回转篮想高处运动,然后慢慢的甩出回转篮,落到果渣盒中,而果汁透过回转篮进入到回转圆腔,然后随着离心运动的进行留入果汁杯。至于壁厚我们设计为2mm,这样就可以满足我们的基本要求了。端盖的结构如图所示: 榨汁机顶盖2)电机外壳电机外壳的作用主要是用来固定电动机,所以设计的时候我们主要考虑电动机部分,在电机外壳的内部我们为电动机设计了一个圆柱形壳体,电动机的固定方式我们才用螺母固定,在电机外壳的内壁顶部我们设有3个螺孔,这样可以更好的保证电机的平稳性。其次我们要考虑的是电机与驱动部件的配合,在电机外壳的顶部开有圆形口,电机轴端由此伸出,在电机轴端安有斜齿轮轴伸,这样就可以与回转篮相配合,达到驱动效果。再者,我们要考虑电机外壳与离心外壳和底座的配合以及盖锁在其上的安装位置,考虑果汁杯和果渣盒的位置,我们将盖锁设计在电机外壳两侧面,与果汁杯和果渣盒位置分开。壁厚仍为2mm,某些局部可能有些变化,但起伏很小,不会影响模具的制造。图4-4 电机外壳 3)果汁储存杯的设计果汁杯和果渣盒的设计则主要考虑生活中的习惯问题,人在拿果汁杯和果渣盒的时候是否很方便,采用曲面方法,适合人体工程学,果汁出口要有一个杯子的高度,使果汁能够顺利流入杯子。设计图如下所示。考虑到环形刀网和刀架与果汁储存杯之间存在相对运动,必须考虑到密封的问题,在杯体和旋转刀架之间嵌入丁腈橡胶圈,解决密封的问题。如图所示。刀架密封圈果汁储存 杯 图4-5 密封结构设计图4)电动部件电动部件主要是为榨汁机提供动力,有250W单相交流串激式电机、输出轴、电机外壳、底座和电源开关等组成。串激式电机的结构如图1所示。整机由转轴、定子、定子绕组、转子、转子绕组、换向器和炭刷等组成。串激式电机的典型的特点是功率大、效率高、转速随负载力矩变化而变化,当负载减小时,串激式电机转速增加,最高可达19000r/min左右。为避免转速过高造成电机烧坏,一般不允许空载起动,同时也不宜加入太多水果,以免使电机超载而温升过高。4.3 榨汁机的基本结构及其转配4.3.1榨汁机的总体机构布局整机由榨汁机壳体、榨汁部件和电动部件三大部分组成。如图4.1所示。电插板果汁储存杯底座电机顶盖 图4-6 榨汁机总体结构一览图4.3.2榨汁机的零件总成及其装配 此榨汁机的零件总成为:1、 底座2、 电机安装座3、 电机外壳4、 电机轴连接件5、 定位环6、 刀架及刀网7、 果汁储存杯8、 250w单相串激电动机 图4-7 榨汁机内部结构视图9、 电插板 1) 首先将250w单相串激电动机套入电机安装支座并在输出轴端部安装孔配套拧入四对M5的螺钉和弹垫,之后将电机安装座的另一端,转配好榨汁机底座,并拧入4个M3的沉头螺钉,使电机能够稳固在底座上。2) 把电机外壳罩入电机,与底座配合,并拧入4个M3的沉头螺钉,使其稳固在底座上。3) 套上果汁储存杯,将电机轴连接件套入电机轴,将键敲入键槽,盖上定位环,再配装M5的内六角螺钉和弹垫。4) 在果汁储存杯底部嵌入一个丁腈小胶圈,将刀架螺旋拧入电机轴连接件,并使刀架底部稍径向下压紧密封圈,保证密封性能。5) 把上盖配合旋入果汁储存杯,至此,榨汁机安装完毕。第五章 榨汁机的使用和保养1)使用前,先把切削刀和离心过滤器旋紧,然后把安放离心过滤器和切削刀的上箱紧固在底座上,再接通电源。 2)待电动机起动运转正常后再投入食物。3)投放的食物不应过大、过厚或过硬,以免损坏切削刀和造成电机超载。4)离心笼内不应贮存过多的食物碎末。若碎末过多,应及时清理,否则会引起震动。5)榨汁机要经常保持机身内外清洁。在每次使用完毕之后,要认真加以清洗。但清洗时,切不可用水龙头冲洗榨汁机的下部底座,也不要将其泡在水里,以免影响底座中电器部分的绝缘性能。使用注意事项:1、不应该空转。榨汁机在空载时,其电机转速非常快,很容易造成电机轴磨损从而导致器具损坏。2、应该按照购买时所提供的使用说明书的要求来进行操作和清洁。不能让榨汁机长时间(超过说明书中所规定的时间)工作;不能加工超过说明书规定量的材料;更不能加工除说明书规定外的其它东西。3、不要把整个产品浸入水中进行清洗,应完全按照说明书的要求进行清洁。4、不能自行维修榨汁机器具。榨汁机器具是涉及安全的日用品,消费者在使用过程中如果器具损坏不能正常工作,千万不能自行拆开外壳进行维修。应该等其完全冷却下来,再按说明书的要求进行操作,如果产品仍然不能正常工作,则应停止使用并送维修店或生产厂进行维修。5、在使用时,应该用手固定产品且不要把手伸入容器中,不能让小孩触及工作中的榨汁机器具。6、电源插头应该完全地插入插座中,对带接地的产品,应该与带接地插口的插座连接。 Honest Guide to Choosing a JuicerIn the 1930s a chap called Dr Norman Walker invented a juicer which firstly grated and then cut produce. The resulting mass was then to be put into a linen bag and placed under a hydraulic press, directing juice down a spout. (Dr Walker lived to 108 years of age - he died in a surfing accident). You can still purchase this 2-stage Norwalk machine for around $2000, which is a very prohibitive price indeed. And most of the juicers you will find on sale havent evolved much since then, which brings us to.Centrifugal juicers. Centrifugal juicers work by using a flat cutting blade on the bottom of a rapidly spinning strainer. Cut produce is flung out over the sides of the strainer. Due to the centrifugal force, juice then passes through tiny holes in the strainer. Features intrinsic to this design include: The strainers are HUGE and a pain to clean The cutting blades are tricky to clean and some are particularly dangerous to handle The process incorporates mass oxidization and therefore a dying and brown juice There is a lot of unpleasant froth Leafy green vegetables are impossible, so no herbs and no wheatgrass Pulp builds up in the strainer and efficiency falls rapidly The centrifugal force pushes a lot of pulp through the strainer, resulting in a lot of pulp in the juice These juicers can seriously damage your hearing, and wont be popular in a terraced house or flat, or if anyone is still in bedUltimately, the technology inside a centrifugal juicer is not unlike that of a tree cutter. Theyre spinning at up to10000rpm. The resulting frictional heat is not good for your juice. Neither is 10000rpm an easy task for a motor when under constant resistance. The amount you can spend on a centrifugal juicer varies from 30 to over 100 - so what are you paying for? Well, in truth, mostly brand name and aesthetic design. While the cheapest of machines are certainly week hearted and not going to last you long, experience and feedback tells us that more expensive machines dont necessarily last any longer. In fact, if everyone who bought a juicer used their machine every day we think nearly every machine on the market would be withdrawn because with daily usage virtually all machines would fail within their first year, let alone within warranty. This guide has been written as a result of the cumulative experience of several people, spanning over 4 years and many many juices. In this guide you will: discover clearly the best type of juicer for you pinpoint the best machine in each category be saved from the confusion of conflicting promotional material benefit from unique comparison charts and photos gain links to background information and in dependant reviewsAnd thats a brave statement for us to make but far braver is the warranty provided with juicers. Most people we speak to that have burnt out previous machines never even took it back. We live in a throw away society sadly, but its great for manufacturers. Another fact of society is how many of us shelve new products. In a recent survey juicers were found to be the most likely new item to be left in the cupboard, second only to the George Foreman style grills. We believe this is because of the above drawbacks of this style of juicer - as the high street centrifugal is by far the most purchased type of juicer in the UK. Centrifugal juicers that handle whole produce. WOW! what a feature, whole apples, whole heads of celery. Having said that, impatience isnt the highest virtue. One health food author tells us its great being able to put in a whole head of celery, but the motor keeps burning out and I have to take it back to the shop. Ultimately, this feature is one of convenience, but the process still destroys the juice, and you still have to clean up after every glass produced as the strainer clog seven more rapidly.The juicers themselves have had no technical redesign other than a widening of their feeding chute, so there has been no consideration of increased motor resistance. Also, a wide feeding chute is extremely dangerous an adult could loose their whole arm in there. Also, anything that doesnt fill the chute rattles all over the place, like a simple carrot. Generally there is immense volumes of foam and the juicers dump a lot of pulp into the juice which then requires straining. How many juicers do you want to buy this year? One last word on whole fruit juicing: animals that live inside fruit. Think about it, even if your juicer can take whole apples, maybe its worth quartering each apple first. worm juice anyone? Centrifugal juicers with pulp ejection. A relatively small market place that holds a few domestic machines, and mostly commercial machines used by juice bars. Juice bars need juice QUICK (which is why they have to sacrifice quality and use the centrifugal process) and they cant afford to continually disassemble their juicer to clean it. In a centrifugal juicer that has pulp ejection, the sides of the straining basket are cleverly slanted, the air flow sending the pulp produced automatically into a collection basket without the need for cleaning. The process IS NOT full-proof by a long way, and offers no inherent improvement on all the flaws of centrifugal juicing already mentioned. Please be aware that stringy, fibrous produce and wheatgrass is still not a success in this type of juicer. If youre looking to incorporate these into your juice read on.A revolution occurred in the 1950s when Plastaket invented the Champion, the worlds first masticating juicer. Masticate means to chew, and as the Champion is the only juicer with teeth we feel its the only masticating juicer available. Many other web sites will class gear juicers as masticators. We have put these into their own category below. The Champion juicer gives a greater yield then centrifugal juicers and the degradation isnt nearly as severe. But its cutter is running at 1425rpm - and that can be a problem. Leafy veg is still a NO - only now it gets caught in the teeth! If you juice slowly (or the teeth are clogged with plant fibers) you get warm foamy juice as the cutter is spinning rapidly against the produce that hasnt yet cleared the juicing chamber. When the Champion arrived on the scene over 50 years ago, Siegfried Gursche, author of Healing with Herbal Juices, described as a tragedy the extremely high speed of the juicer which causes lots of friction which heats and sometimes even steams the juice. Some nutrients, especially all live enzymes, are destroyed by heat. Where the Champion excels (in terms of speed of throughput and yield) is with root vegetables. If youre planning to process A LOT of carrots, then the Champion would be a consideration for you (i.e. the Gerson Diet). Although, in our opinion youd still be better off with a gear juicer, and you should make green juices your main stay. Suddenly an innovation occurred in juicing.Low speed, gear juicersGear juicers operate anywhere between 70 and 120 r/min. Thus, in a gear juicer: Produce is crushed - No cutting or spinning Enzymes are preserved AMAZING green juices become possible Your juice is cold, as it should be You lift a glass of living juice every time They are the easiest of all juicers to clean (dont let anyone lie to you and claim that any juicer mentioned previously in this guide is easy to clean theyre not).As a visual representation of the differences we have prepared two glasses of apples juice - one prepared in a single gear juicer, the other in a centrifugal juicer. The rapid oxidization of apple juice makes this a good test for the colour and therefore vitality of the juice. Other produce would show similar results for the centrifugal produced juice, but typically the single gear prepared juice would exhibit less or no foam. E.g. orange juice is entirely foam in a centrifugal juicer and zero foam in a single gear juicer. Many people have said or written that you need to drink juice produced in a centrifugal juicer straight after producing it. Usually it is explained that as the juice deteriorates you can benefit from the juice by consuming it straight away. PLEASE stop and think. If a process causes destruction, removing it from your sights quickly does not alter the destruction. If you want to juice for health you must produce the juice yourself in a low speed gear juicer. This is the only way to gain benefit from the abundance of nutrition available in fresh fruits any vegetables when their fibre is safely separated. No other Apple juice extracted with a Single Gear Juicer Has a healthy, even color, showing that its full of enzymes and nutrients 20% more juice yield Less foam Apple juice extracted with a Centrifugal Juicer Has oxidized and turned clear brown -only water content with no enzymes andnutrients Poor juice yield A lot of foam domestic or commercial juice preparation will give you the benefits of living enzymes,vitamins, minerals and other phytonutrients.So now that were totally convinced that its only worth drinking fresh juice if prepared using a gear juicers, weare left with one question - single gear or twin gear?Single gear juicersA single gear juicer has a single rotating screw or auger, with an ever narrowing thread along which produce follows until crushed inside a screen which allows juice through and pulp to be ejected at the tip. This process is very similar to the worm gear of a meat grinder. The auger is divided into a two phase process of first crushing and then wringing-out the produce against the wall of a conical filter screen. Single gear juicing offers you top quality juice with ultimate friendliness of use. You wont ever be put off using a single gear juicer, it will forever remain a joy. In the UK the original Oscar 502 has just been made available again as the Oscar Living Juicer, a machine youll see in juice bars like Planet Organic. There are a hoard of other single gear juicers available now, including the LE quip Visor, Solo Star and Live Please take note that despite superiority claims of the enzyme content produced by different gears juicers, there is NO evidence or test ever been done to identify if one machine is more successful than another in this area. It seems that all promotional material for this type of juicer, including unedited web copy, claims superiority. We would advise not basing your purchase around such statements. Additionally there is no evidence that slower is better (relative to this category, i.e. 70rpm is not better than 120rpm). TRUE, slow speed has immense benefits over thousands of revs per minute, but the small differences in speed between juicers in this category are not cause for you to choose the slowest.Single gear juicing was invented at the beginning of the nineties with the introduction of the Oscar 502, designed and Manufactured by a Korean company named Dong Ah which was founded by two business partners in 1988. One of the two businessmen betrayed the other, set up a nearby manufacturing facility, started a new company called Dong A Oscar (cheeky, hey?) and within a short time had produced the Matstone juicer - a copy of the Oscar design. Outside of Korea the machine was branded the Samson, and globally, Samson agents touted their machine as the new model Oscar. They cut a number of corners to make their Matstone juicers more affordable and pushed heavily with their marketing. In one country, an ex-employee of the Oscar distributor stole $75,000 and the customer database before setting himself up as the Samson distributor. In the UK, where there was no resident Oscar distributorship, the Oscar was long forgotten, many people believing to today that their Samson/Matstone machine is the new Oscar. The story nearly finished with Dong A Oscar falling to bankruptcy on 26th September 2005.Enzyme juicers. These have not proved as efficient or reliable as the Oscar brand. We recommend looking closely at warranty durations, as the Oscar Living Juicer offers 12 years, and only one other machine beats that. Dual stage single auger juicers The latest innovation in single gear juicers is a 3 phase extraction auger working inside a dual stage juicing screen. Upon the initial crushing of the produce, any released juice is directed through the first stage of the juicing screen into the juice collecting bowl. The crushed produce minus much of its juice then continues its way through the machine, where there is a finer holed screen to obtain not only a higher yield, but a near pulp free juice. The picture below compares a dual stage juicing screen (top) with a single stage juicing screen (bottom). Clicking on the picture will show alarger picture. This process is claimed to obtain up to 20% more juice than ordinary single gear juicers and mostly yields like a twin gear machine. A test with carrots yielded 26% more juice! With other single auger juicers, the juice is only produced in the second stage, requiring larger holes in the juicing screen. Consequently a sieve is provided with other single gear juicers covering the juice collecting bowl to catch pulp. As juice is allowed to exit at the first stage this type of juicer doesnt suffer from a number of problems that affect virtually all other juicers: leaks, especially into the locking clip and motor housing (this causes long term problems with the gearbox as fruit acids reach the lubricating grease within the gearbox causing extra noise and eventually a breakage. additionally locking clips / face plates of juicers are tricky to clean and add toyour time). poor performance with soft fruits (soft fruits hold more juice extractable at the first stage. When trying to pass this juice onto the second stage of ordinary single gear juicers, typically nothing happens at all and produce remains stationary in the juicing drum with the juice and all the auger does is stir it).There are only two dual stage single gear juicers available on the market, the Solo Star II and the Oscar 900 VitalMax. Youll note that both brands have been worn on earlier models. We prefer the Oscar VitalMax for a number reasons, including a lighter/sleeker design, as well as being easier to use and clean.
