武汉理下大学硕十学位论文 摘要 中国饮食文化渊远流长，博大精深，享誉世界。随着全球一体化趋势日益 加快，国际交流日益频繁，作为中外交流中最直接、与日常生活最紧密相关的 一种社会文化交流方式，饮食文化的交流尤其显得注目。但是，由于文化的差 异和语言沟通的不畅，各国客人在品尝中国美食时往往不是很方便，甚至常因 菜单翻译闹出笑话。而以饮食文化的翻译为对象进行的学术研究做得远远不够， 翻译中式菜名的研究更是少之又少。本文以北京市人民政府外事办公室、北京 市旅游局联合推动出版的中文菜单英文译法一书为主要对象，结合其它辞 典、工具书以及互联网上的英文中式菜名，从社会符号学翻译法的视角出发， 采用陈宏薇教授提出的“意义相符、功能相似 翻译标准，探讨了在中式菜名 英语翻译过程中的指称意义、言内意义和语用意义的传递问题。本文由五个部 分组成。 第一章引言部分简要介绍了本文的研究目的、意义以及文章的要点。 第二章为本文的理论基础，回顾了社会符号学翻译法理论的发展过程，介 绍了语言学家们对符号学、社会符号学的不同理解；探讨了社会符号学与翻译 之间的联系；介绍了陈宏薇教授提出的翻译标准：“意义相符、功能相似 ；最 后还分析了社会符号学翻译法相对其它翻译法的优势。 第三章首先简单介绍了中国菜；然后分析了中式菜名不同于西式菜名的特 点，以便更准确的进行翻译；接着阐述了国内外对中式菜名的翻译以及相关翻 译的研究现状；最后分析了翻译中式菜名过程中，由于中西文化明显的差异而 带来的问题。 第四章结合大量实例，以社会符号学翻译法的角度，分别从中式菜名的指 称意义、言内意义和语用意义三个层面，探讨了中式菜名英译过程中，尽管存 在明显中西文化差异，但仍然能够通过增译、意译等各种翻译方法，尽量补偿
