Culinary Culture of ChaoshanThere is an ancient Chinese saying goes like this, “Food is the paramount necessity of people”. As our great China is a vast country, there are rich resources of food making the various of delicious food. Yue Cai is one of the eight most famous cuisines, and it is worthy mentioning that Chaoshan Cai is not only one of the elements of Chinese food, but also one of the three branches of Yue Cai.History Chaoshan Cai has a very long history. It can be traced back to the Qin dynastic and accumulates abundant cooking cultures and variety of cooking methods. When the Spring Festival or other celebrative days come, Chaoshan people like to arrange tables for the meal of get-together, which forming the custom of have-meals-together in order to unite the members of a family.FeaturesChaoshan Cai is famous for its cleanness, delicacy, variety and elegance. Cleanness can be verified by the colour of the food; delicacy is showed in the selection of ingredients; variety is popular for the condiments and the resources; elegance can be seen when the food is ready: the layout of the food induces us to think it is rather a brilliant craft than a plate of food. Soup Chaoshan people think soup is an important part in the daily life. No matter how many foods on the table, soup is indispensible. Chaoshan people are particular about the making of soup as well as the ingredients. Whether the ingredients go with the food they eat is the first thing they concern.Porridge From the very outset, Chaoshan people like to have porridge for dinner, which is one kind of cooked cereals, differ from the porridge in the north. Porridge is a little sticky and thick, and Chaoshan people has a special name for itm. That the making method is also Chaoshan people pay attention to: take enough water into the marmite with the refined rice; when the rice begins to enlarge, put up the marmite and wait for 10 minutes, then m comes.Kungfu TeaKungfu Tea differs from tea in other districts. On one hand, Kungfu Tea emphasizes the way of tasting, sipping the tea instead of swigging in one drink. People taste the tea rather than quench their thirst. On the other hand, when the host finishes making tea, distinguished guest or the elder would taste the tea first, then the host himself, which shows the respect. It is said that the Chaoshan tea etiquette is just the Chinese orthodox tea etiquette.It is popular that every Chaoshan household has the tea utensils. The purposes are not only for tasting the tea, but also the way of relaxing from busy work and the catalyzer of communication and union.Typical dishes Oyster omelette is such one famous snack that nonnative would have a taste when they visit Chaoshan district. There are venders sell this food in cities and villages. People like to eat because oysters help them to see clearer and keep warm in heart, especially in winter. The most popular dish is Beef Meatballs, which has nearly 100 years history. It can be divided into two types: Beef Meatballs and Cowhells Meatballs. The first kind tastes tender and delicate. Beef Meatballs adds some cowhells, and becomes Cowhells Meatballs, tasting more delicious
