山东大学硕十学位论文 摘要 中国烹饪文化源远流长，独具魅力，在中外文化交流中发挥着巨大的作用。一份 高质量的中英文菜单不仅能给客人点菜提供帮助，而且在传播中国烹饪文化上起着独 特的作用。虽然中英文对照的菜单很普遍，但目前菜单的翻译水平却差强人意。而对 菜单翻译的研究也大多局限于基于个人经验的翻译方法和策略上，缺乏较为系统的理 论作为支撑。有鉴于此，本文从德国功能翻译理论出发，在对中英文菜单进行对比研 究的基础上，试图从一个新的视角研究中文菜单的英译。 根据功能翻译理论，源文本只是起到提供信息的作用。所谓翻译，就是译者根据 目的文本的功能从原文本中选择恰当的信息构成目的文本来实现其特定功能的过程。 菜单作为一个完整而独立的语篇，从文本类型来看，属于“传意+ 使役 类文本，其传意 功能主要体现在提供有关菜品的信息，包括原料、调料、烹饪方式等，而其使役功能 简而言之就是说服客人点菜消费。 从中文菜单和英文菜单的比较中可以看出，虽然在文本功能上二者一致，但在实 现方法上却各不相同，这主要体现在中英文菜名不同的命名方式上。就文体风格而言， 中文菜名的命名方式繁多，喜欢采用对称和富有韵律的四字短语，修辞格，传说和典 故；而英文菜名的命名相对简单，着重于传达菜品的基本信息，菜名可长可短。从内 容上看，在菜名的组成元素即原料、调料、烹饪方法、色、香、味、形、连接词等方 面的表述上，二者亦存在较大差异。此外，中文菜单和英文菜单在菜名的编排上也又 所不同。因此，在翻译过程中，译者应将中文菜单看成是“信息来源 ，充分考虑英 语国家客人的文化背景和接受能力，在此基础上对其进行调整，以实现目的文本的预 期功能即提供菜品信息，说服客人点菜消费，提升饭店形象以及传播中国烹饪文化的 功能。作者还对翻译过程中出现的翻译错误进行了归纳并分析了存在的原因。最后作 者根据中文菜名的分类提出了直译、意译、直译加意译、意译加注、拼音或拼音加注、 拼音加直译加背景资料( 附页另注) 及类比的翻译方法和特殊情况下不译的翻译策略。 关键词：菜单； 功能翻译理论； 英汉对比； 策略及方法； 山东大学硕f j 学位论文 a
