农产品采后生理与贮运技术课程教学大纲 课程中文名称农产品采后生理与贮运技术课程英文名称 Postharvest Physiology and Storage Technology for Agricultural Produce开课学期第2学期开课单位食品科技系开课层次博士生课程()硕士生课程()课程类别学位课程()选修课()主讲教师林亲录职称教授联系电讲教师秦丹职称副教授联系电学时60其中:讲课30课堂讨论10自 学20学分3教学方式讲授、讨论与自学相结合考核方式闭卷考试教学内容(200字以内)一、园艺产品(果品、蔬菜和花卉等)采后生理及最新研究进展(Postharvest physiology of horticultural produce and its development)1、本章主要了解园艺产品采后的成熟衰老机理、呼吸作用、呼吸强度及其与采后贮藏的关系;了解乙烯等激素与园艺产品贮藏的关系。2、园艺产品采后常用贮藏方法及进展(Routine storage methods of horticultural produce and its development)本章主要掌握园艺产品采后常用的贮藏方法、常见的病害与最新进展。3、谷物类(主要是稻谷、大米)贮藏方法及进展(Storage methods of cereal (rice) and its development)本章主要介绍谷物类(主要是稻谷、大米)贮藏方法及进展。4、采后商品化处理与品质评价方法(Commercial evaluation and managemen of postharvest produce)。课程内容英文简介Fresh fruit and vegetable have been a part of the human diet since the dawn of histry.The nutritional value of some fruit and vegetanle was recognized in the early 17th century.The status of fresh agricultural produce has also benefited from an internatinal trend towards fresh natural foods,which are perceived to be superior to processed foods and contain less chemical additives.The actural causes of postharvest loss are many but can be classified into two main categories:physical loss and quality loss,but few studies have accurately quantified these loss.Any attempt to improve the postharvest handling of agricultural produce should be preceded by a quantitative estimate of postharvest loss.The ultimate role of postharvest technology is to devise methods by which deterioration of produce is restricted as much as possible during the period between harvest and end use.The prinicipal weapon in the postharvest armoury relates to control of the storage environment of handling conditions. Important environmental conditions are the temperature, concentration of certain gases and water vapour in the atmosphere around produce.The need to be responsive to market needs has forced marked changes in quality assessment.This course sketchily introduce postharvest physiology of horticultural produce and its development, routine storage methods of horticultural produce and its development, Storage methods of cereal (rice) and itsdevelopment, and commercial evaluation and managemen of postharvest produce.教学目的及重点、难点教学目的是让学生掌握了解园艺产品采后的成熟衰老机理、呼吸作用、呼吸强度及其与采后贮藏的关系,了解乙烯等激素与园艺产品贮藏的关系,掌握园艺产品采后常用的贮藏方法、常见的病害与最新进展,掌握谷物类(主要是稻谷、大米)贮藏方法及进展,以及采后商品化处理与品质评价方法。重点是主要农产品采后贮藏技术最新进展。难点是农产品采后衰老、腐烂机理。课程的地位、作用和任务是“农产品贮藏及加工工程”专业硕士点最重要的学位课程之一,是该学位点的专业基础课。教材及主要参考书教材:Ron Wills,PostharvestAn Introduction to the Physiology & Handling of Fruit ,Vegetable & Ornamentals.
