All localities and departments to the village and no unauthorised created职业技术学院毕业综合项目成果目 录1、 顶岗实习规划和目标1（1） 顶岗实习规划1（2） 顶岗实习目标12、 顶岗实习单位确定途径及体会1（1） 顶岗实习单位确定途径1（2） 体会13、 浙江大酒店简要介绍24、 浙江大酒店餐饮部会所岗位描述2（1） 部门描述2（2） 岗位描述2五、浙江大酒店实习收获及分析总结2（一）浙江大酒店的管理优点31.重视实习生待遇32.重视低碳环保3（二）浙江大酒店存在的不足之处31.宾客用餐食品浪费严重32.员工承担高额杯具破损金额33.员工没有专门的跳班休息场所4（三）针对浙江大酒店不足之处的建议41.对客点菜时适时做好服务提醒42.制定合理的赔偿制度43.开设专门的员工跳班休息场所4小结5浙江大酒店餐饮部会所顶岗实习报告旅游与酒店管理学院酒店管理专业 一、 顶岗实习规划和目标（一）顶岗实习规划作为酒店管理专业的学生，参加顶岗实习对我们来说是十分必要的。我们这门专业社会亲和度较高，理论与实践联系密切，一味只是学习书本知识而不参与实践工作是不能真正胜任酒店行业的管理和实践操作工作的。根据学校的专业教学计划安排，我们专业的每个同学都需要在酒店进行为期两个学期的顶岗实习，以让我们对所学的专业有一个更立体的认识，让我们的理论知识得到巩固和加强，进而培养我们的服务技能和业务操作能力，从而达到实践教学和实习就业的目标。（二）顶岗实习目标本人希望通过实习提高自身的专业技能和沟通技巧；了解酒店管理的艺术性和人力资源合理利用的重要性；学习酒店的企业文化；在实践工作中提升和锻炼自己。具体地说，我希望可以在酒店餐饮部实习，通过与各样的宾客接触交流，加强与人打交道的能力，改善自身性格中怯懦的部分，更好地融入社会交际圈。二、顶岗实习单位确定途径及体会（一）顶岗实习单位的确定途径学校组织双选会，通过“双向选择，模拟就业招聘”这种形式让每个专业学生进入酒店参加实习。在老师的推荐下，以及通过上网查阅的方式，我选了几个自己较为心仪的酒店。我记得当时首选的是杭州的歌德大酒店，作为国企，其实习生福利非常吸引我，而且地处杭州火车站附近，回家回校都较方便。面试过程非常顺利，但他们招的基本都倾向杭州本地或者外省的，而我是宁波人，他们考虑到我实习结束以后继续留店上班的可能性较之更小，因而没有录用我。后来我去了浙江大酒店面试，有了一次面试的经历，这次就显得非常放松和自然，加上面试的酒店人力总监正好也是宁波人，整个对话过程十分亲切顺利，我自然也如愿通过了此次面试。（二）体会第一次面试的歌德大酒店没有录用我，可见地方属性是其特别看重的一点。后来第二次面试的浙江大酒店，同为国企，它更看重实习生的后期培训和锻炼，本人觉得这也是个不错的选择。顺利通过面试后，我总结了一下，除了一些客观限制条件外，面试时轻松的状态和自信的表述是十分重要的。三、浙江大酒店简要介绍我所在的实习单位是杭州的浙江大酒店，它是系属浙江省交通投资集团实业发展有限公司的全资子公司，位于杭州市经济文化最繁华的武林广场CBD商圈，地理位置优越，购物交通便捷。酒店主楼高29层，拥有276间（套）风格迥异的舒适豪华客房，设施先进，功能齐备。此外还为各阶层宾客提供规格不同的会晤场所和丰富多样的中西式餐饮服务以及康体娱乐场所，以满足宾客的不同需求。酒店25楼设有目前杭城仅有的空中大堂，宾客置身其中，杭城美景一览无遗：远可瞻西子湖婀娜之妩媚，近可观都市人文喧嚣之华彩。09年全新装修后的浙江大酒店定位为城市精品商务型酒店，旨在为出门在外留此休息的宾客们提供更专业、精细、舒适的人性化住店用餐服务。四、浙江大酒店餐饮部会所岗位描述（一）部门描述本人所在的顶岗实习岗位是酒店餐饮部的静余轩会所（后来被调至静余阁行政俱乐部）。会所位于酒店27层，现主打精品杭帮菜，经典粤菜广点为辅。其闹中取静的用餐环境让人体验了“于繁华中寻静谧，于闲暇间庆有余”的休闲理念。会所共有大小包厢8个，总餐位84个。而位于28、29楼的会员制私人俱乐部，其中不仅设有多个不同规格的私密包厢，还设有雪茄吧、酒窖吧、书吧、斯诺克室等等包间，为会员提供餐饮、会议、休闲等一系列VIP服务，让会员宾客享受贵族般的待遇。（二）岗位描述作为会所的服务员，我们除了需要做最基本的摆台装饰、就餐服务、迎宾送客的工作以外，还需要关注细节卫生、检查电器设备、保管银器杯具和布草，每项工作内容和操作流程都要做到心中有数，对有问题的需及时进行更进。按人员的理论编制来说，要求固定能做桌的服务员14位（包括俱乐部的4名高级服务员在内），而实际上除了8名实习生以外，正式上班的员工只有两三位（后来都陆续离职），而且高级服务员的岗位一度空缺。人员不足，正式员工比例又低，实习生便被要求做更多的工作。比如：本人还负责俱乐部酒廊的洋酒照看，确保酒窖温度恒定；要对雪茄吧里的雪茄做好数据记录，设定雪茄柜恒温。这些本都属高级服务员的工作范围。五、顶岗实习收获及分析总结（一）浙江大酒店的管理优点 1.重视实习生待遇浙江大酒店餐饮部正式员工比例较低，具体工作的操作均以实习生为主，实习生是酒店员工的重要组成部分，酒店对此亦是十分重视，对实习生的福利待遇也做得比较到位。具体地说：实习生与酒店正式员工一样，都可在节假日领取到相关的礼盒物品，加班亦有加班费补贴；此外实习生每月还有酒店发放的电影券一张，这是其他员工享不到的福利，这些做法都确实有力地提高了实习生的工作积极性。2.重视低碳环保酒店积极响应大环境“节能降耗”的口号，切实考虑酒店自身因素，并对此作出正面反馈。具体做法如：特别制作相应的宣传手册和海报，以提醒抵店宾客和酒店员工有意识地节能环保；要求食堂工作人员配合，督促员工减少食品浪费。全方面打造绿色酒店的形象。（二）浙江大酒店存在的不足之处1.宾客用餐浪费严重就本人所在的会所、俱乐部而言，来消费的宾客一般用餐规格都比较高，基本都在400元/位以上，这基本上就保证了菜品的精致和份量，但来此消费的宾客很少是为家庭用餐或朋友便宴，大多以商业宴请居多，这种情况宾客用餐过程中都多以交谈和饮酒为主，用菜量其实是不大的，而他们又出于面子或者其他因素的考虑，不会选择餐后打包，这就很直接地造成了用餐食品的浪费。且不说这种现象不低碳不环保不利于建设节约型社会，于人的身体健康也无益；且更是造成了不必要的钱财消费，加剧了腐败问题。2.员工承担高额杯具破损金额宾客就餐的过程中必然会伴随着酒水饮料的饮用，相应的，杯具的使用率就会很高。在会所用的最多的是840和610的饮料杯以及350的红酒杯（此处数字均表示规格，数字越大杯子口径越大）。这几款杯子高挑漂亮也极薄透易碎：宾客夹菜时无意间碰翻、我们服务员洗拭时直接强水冲刷、擦拭时用力过猛等等情况都会造成杯具的破损。而酒店只关心杯具的破损率，为减少损失对我们服务员要求包厢责任制：包厢内所有物品损失均由包厢服务员自行承担。虽然这样做确实让大家开始关注保管包厢内的杯具物品，对包厢物件的盘点工作也有了主动性，但杯具破损的问题还是客官存在，全部损失由服务员承担也引起了员工的不满情绪，影响了服务质量。3.员工没有专门的跳班休息场所浙江大酒店的员工宿舍距离酒店比较遥远，为此酒店专门设了班车定点定时接送员工上下班，其往返单程时间约为25分钟（不堵车的情况下）。像我们餐饮包括会所这块都是有跳班的，下午两点至五点为休息时间，而在此期间酒店班车是停开的，我们若想回寝室休息，至少得花费2个小时在路上。而酒店对这个问题上的态度显然不够重视，并没有想到要安排专门的跳班休息场所供员工暂时休息。甚至餐饮部的经理还对跳班休
