OneinthreeUKconsumersthrowawayfoodjustbecauseitreachestheuse-bydate,but60%(4.2milliontons)
ofthe£12.5billion-worthoffoodwethrowawayeachyearissafetoeat.
Theresearchers,whosefindingswerepublishedinACSSensors,saythesensorscouldalsofinallyreplacethe
use-bydate,whichisnowwidelyusedtotelliffoodisfreshandeatable.
ThesensorscosttwoUScentseachtomake.Knownas“paper-basedelectricalgassensors(PEGS)”,they
sensespoilagegaseslikeammonia(apoisonousgaswithastrongunpleasantsmell)inmeatandfishproducts.The
informationprovidedbytheelectronicnoseisreceivedbyasmartphone,andthenyoucanknowwhetherthefood
isfreshandsafetoeat.
LeadauthorDr.FiratGuder,ofImperial’sDepartmentofBioengineering,said,“Althoughthey’redesignedto
keepussafe,use-bydatescanleadtoeatablefoodbeingthrownaway.Theydon’talwaysreflectitsactual
freshness.Infact,peopleoftengetsickfromfood-bornediseasesduetopoorstorage,evenwhenanitemiswithin

ThisstrangecasegottheattentionofDavidDunning,apsychologistatCornellUniversity.Heaskedhis
graduatestudentJustinKrugertohelpfigureoutwhatwasgoingon.Theyfoundthatalmosteveryonethinkstheir
abilities(likesocialskillsorthinkingskills)aregood,butsomepeoplemistakenlybelievetheirabilitiesaremuch
betterthantheyreallyare.Thiswrongsenseofconfidenceisnowcalledthe“Dunning-Krugereffect.”
Tostudythis,DunningandKrugerdidexperimentswithcollegestudents.Inonetest,theyaskedstudents
questionsaboutgrammar,logicandjokes.Thentheyhadthestudentsguesstheirscoresandhowtheydid
comparedtoothers.Thestudentswhoscoredthelowestoverestimatedtheirabilitiesthemost.Forexample,those
atthebottomthoughttheydidbetterthantwo-thirdsoftheotherstudents!
It’scommonforpeopletooverestimatetheirabilities.Buttheproblemwithunskilledpeopleisthattheynot
onlymakebadchoices—theyalsocan’ttellthey’remakingmistakes.Inayear-longstudy,goodstudentscould
betterguesstheirfutureexamscoresiftheygotfeedback(反馈)ontheirgrades.Butpoorstudentsstilldidn’t
realizetheyweredoingbadly,evenwhentheygotclear,repeatedfeedback.Insteadofthinkingabouttheirmistakes,
theyinsistedtheywereright.AsCharlesDarwinwroteinTheDescentofMan(1871):“Ignorancemorefrequently
begetsconfidencethandoesknowledge.”
Interestingly,verysmartpeoplealsocan’tassesstheirabilitiesaccurately.JustasDandFstudents
overestimatetheirskills,Astudentsunderestimatetheirs.Thedifferenceis:ifgivenhelpfulfeedback,skilledpeople
canadjusttheirself-assessment—butunskilledpeoplecan’t.
