中国菜谱英文翻译大全 为期10天的“中国菜英文名征集活动”日前顺利结束,包括热菜、凉菜、羹汤、主食、甜品在内的数千种菜品、酒水、饮料接受了市民的“审核”。中国菜的翻译问题一时成为各界关注的焦点。本次征集活动由北京市外办、北京市旅游局、北京市民讲外语活动办公室联合开展。接受审核的英文菜名来自各星级饭店、餐馆菜单,翻译专家对这些菜名进行了审核和分类,并对原有的菜单英文名进行了增补,现已初步完成了北京市餐饮业菜单英文译法(讨论稿)的编写工作。据悉,今年春节前后,综合各界意见修改后的北京市餐饮业菜单英文译法将正式出台,届时北京市所有餐饮饭店中的数千种菜品、酒水都将参照这个统一的英文译本。今后,中国菜肴的英文名将有望在全国范围内统一。古怪翻译五花八门从本次征集活动的社会反馈来看,豆腐、饺子、宫保鸡丁等中国最传统的食品、菜肴的英文名最具争议。在北京市餐饮业菜单英文译法(讨论稿)中,豆腐被译为“bean curd”,饺子译为“dumpling”。许多市民认为,既然“jiaozi”“tofu”已被世界广泛接受,为什么不采用?此外,对于“宫保鸡丁”这一常见菜式,不少市民认为“kungpao chicken”已被老外们所熟知,可谓家喻户晓,为什么译文舍近求远?(在讨论稿中被译为“sauted diced chicken with peanuts and chili”)记者在采访中了解到,近来许多星级酒店、餐馆均推出了英语菜单,有的按照字面意思直译,有的采取音译,有的则根据典故进行解释性翻译。菜名英译缺乏统一标准、译者专业水平有限等多种原因导致了目前英文菜单五花八门,常常让老外们目瞪口呆,不知所云。加拿大小伙子brain表示,一次他在一家东北餐馆看到“tiger dish”(老虎菜)的菜名时,吓了一跳,心想“中国人为什么要食用受保护动物老虎呢?”类似让外国人摸不着头脑,甚至引起误会的菜名还有很多。例如,有的酒店将“四喜丸子”翻译成“four glad meat balls”(四个高兴的肉团);“宫保鸡丁”译作“government abuse chicken”(政府虐待鸡);“烧鸡”译成“burnedchicken”(烧糊了的鸡);“回锅肉”译作“twice-cooked pork”(烹了两次的猪肉);“生鱼块”则是“chop the strange fish”(砍那陌生的鱼)。最令人匪夷所思地是将“童子鸡”翻成“chicken without sexual life”(没有性生活的鸡)。中国烹饪协会相关负责人告诉记者,菜单翻译不同于一般的说明文字,尤其是一些老字号的传统菜,菜名中既包含典故又具有对手工技艺及风味特色的描述。因此,译名不仅需要让外国客人看得懂,看得明白,还要体现中国菜的风味及烹饪技艺。“其实,一份翻译出色的菜单能全面提升老字号餐馆的服务水平。”该负责人说。菜名英译方法多样中国饮食文化博大精深,菜系流派争奇斗艳,目前各种版本的菜名译法也各有侧重和特点。北京大学英语系胡壮麟教授告诉记者:“菜名的英译方法灵活多变。在翻译中最终采用哪种方法,可根据各人习惯和具体情况来确定,可以是突出菜肴的原料,也可以是介绍其烹制方法,或是体现菜肴的味道及其背后的典故等。”据专家介绍,目前广泛采用的菜名英译法大致分为以下几种。以主料开头的译法主要介绍菜肴的主料和辅料,例如“scrambled egg with tomato”(西红柿炒蛋);或是介绍菜肴的主料和味道,例如“chicken in scallion oil”(葱油鸡)。以烹制方法开头的译法主要介绍菜肴的烹饪方法和风味,例如“stir-fried eel slices”(炒鳝片)、“braised beef with brown sauce”(红烧牛肉)。以形状或口感开头的译法突出菜肴的口感和外形,例如“crisp fried spareribs”(香酥排骨)。以人名或地名开头的译法重点介绍菜肴的创始人、发源地及主料,例如“ma po bean curd”(麻婆豆腐)。许多中国菜肴具有深厚的文化底蕴,对此,北京外国语大学英语学院陈德彰教授建议:“东坡肘子桃园三结义叫花鸡等带有历史典故的菜名通常比较难译,翻译时不妨先音译或意译,说明该菜的具体用料等,然后再简要讲述一下菜肴的典故。这种方式不仅能引起用餐者的兴趣,也能兼顾文化和传播。”(详见50、52期八版“恍然大悟”)尽管国内译者在翻译中国菜名上大费周章,各种翻译方法各有特点,但是在美国生活多年的曾女士表示,在国外唐人街的中餐馆中,菜单翻译都很“直白”。比如,“鱼香肉丝”便是“shredded pork in garlic sauce”(在大蒜酱汁里的肉丝),“咕咾肉”是“sweet and sour chicken/pork”(酸甜鸡、猪肉)。“这种直白的翻译在国外流传已久,早已深入人心。”曾说。译名标准兼顾文化与实用记者从市外办了解到,目前对英文菜名的审核、分类以及标准制定工作正在紧张进行中。北京市民讲外语活动顾问团专家、清华大学外语系程慕胜教授说:“翻译中国菜名,译者首先要对各道菜的原料、烹饪方法有所了解。这也是专家组所要攻克的首要难题。”据了解,由于中国的烹饪艺术源远流长,各类菜式五花八门,数不胜数,且多具地方和传统特色,有些菜名的背后更是一段典故。因此,要将中国菜肴准确而艺术地译成英文是件难度颇高的工作。译者不仅要了解各种菜的原料、烹制方法、创始人或发源地等,还要熟知菜的色香味形和特色。此外,英文菜名还须简洁易懂,让用餐者一目了然。“对中国菜单英文进行统一是一件非常有意义的事情,但难度也相当大。专家不仅要熟知中国的饮食文化,还须具备翻译专长。菜名翻译标准会兼顾文化和实用两大特点,有望在今年正式出台。” (green tea)有翻译专家称,中餐的名称大体可以划分为五大类:一、以菜肴的主料和配料为主的菜名二 、以菜肴的主料、配料和烹饪方法为主的菜名三、以主料和味道为主的菜名四、半形象化的菜名五、完全形象化的菜名第一、第二和第三类菜名翻译起来并不十分困难,基本上都可以直译;第四类以意译为主,第五类一般不宜直译,最好采用汉语拼音加注的办法。翻译菜单的主要原则是力求简明准确,能够说明菜肴的内容,能够使外国人明白就行了。在准确的前提下,尽量把菜名翻译得优美一些会更好。但是,难度很大。菜名相关知识常用菜名的翻译 31、狗不理包子,中国特产,用汉语拼音,goubuli baozi ,加注:steamed buns filled with vegetables, meat or other ingredients, which, even in the hard days, dogs didnt eat ,because it wan too oily 。 32、长寿面,可以直译为longevity noodles,long life noodles 33、珍珠丸子,不能直译为pearl balls,会被误解成珍珠做成的圆球。应该译为清汤肉丸子,meat balls in clear soup 34、琵琶大虾,这是一个很名贵的菜肴,是把大对虾从中间劈开,保留虾尾,加上配料用油炸,外形酷似琵琶。可译为pipa shaped deep-fried prawns(pipa is a chinese musical instrument) 五、完全形象化的菜名 1、饺子,中国特产,用汉语拼音,jiaozi, 加注dumplings,ravioli。近年来,由于中国与外界的联系日益扩大,出国的中国人,到中国来经商学习的外国人越来越多,作为中华文化载体的中餐必然会随之传播到世界各地。 2、蒸饺,中国特产,steamed jiaozi or steamed dumplings,or ravioli 3、馄饨,云吞,中国特产,用汉语拼音hutun,yuntu ,海外华人餐馆一直这样用,实际上已经被外国人了解。加注:mini jiaozi served in soup 4、元宵,中国特有,用汉语拼音,yuanxiao ,加注:filled round balls made of glutinous rice -flour for lantern festival 5、汤圆,中国特有,用汉语拼音,tangyuan,(filled balls made of glutinous rice flour and served with soup 6、八宝饭,中国特有,用汉语拼音,babaofan ,加注: rice pudding with eight-delicious ingredients 7、花卷,steamed rolls 8、银丝卷,steamed rolls(bread)look like silver threads 9、糖葫芦或冰糖葫芦,北京特产,用汉语拼音,bingtanghulu 加注:crisp-sugar coated fruit(haws, yam, crab apple ,etc )on a stick. 10、猫耳朵,山西特产,直译cat s ears, 加注:steamed cat-ear shaped bread 11、包子,中国特有,用汉语拼音,baozi , 加注:steamed buns with fillings of minced vegetables, meat or other ingredients 12、龙虎斗,就是蛇肉和猫肉,可以形象地翻译成battle between dragon and tiger,加注:stir-fried snake and cats meat 13、驴打滚,属于北京风味小吃,就是年糕卷沾黄豆面,如同驴在黄土地上打滚,非常形象生动,完全可以翻译成donkey rolling on dust- ground,再加注:rolls made of glutinous rice flour coated with soybean flour,looks like donkey rolling on dust-ground. 14、大丰收,实际上是西餐中的什锦生菜沙拉,这个菜名很有创意。堪称中西结合的典范。但是,只有吃过的人才知道它是什么。可以用汉语拼音,dafengshou ,big harvest,再加注:salad of assorted fresh vegetables 白菜心拌蜇头 :marinated jellyfish and chinese cabbage in vinaigrette白灵菇扣鸭掌
