underdifferentconditions—someatroomtemperatureandothersinrefrigeration—fortwo
weeks.
Duringstorage,adetailedmicrobiologicalevaluationwasconductedtoquantifytotalviable
(活菌)countsandspecificspoilageorganisms,includingPseudomonasspp.,Clostridiumspp.,and
Proteusspp.PhysicochemicalanalysesmonitoredchangesinpHandwateractivity,whilebacteria
growthwasassessedduringstorageatroomtemperature.Thescientistsdiscoveredthatthe
CNSL-treatedmeatshowedsignificantlylessbacterialgrowththanuntreatedmeat.Theeffectwas
strongestathigherconcentrations,witha2.0%solutionprovidingexcellentprotectionwhile
maintainingmeatquality.Evenatroomtemperature,iteffectivelydelayedthemeat’ssouring
processandreducedbacteriagrowth,helpingthebeefstayfresh-lookinglonger.
Theresearchersnotethatfurtherstudiesareneededtounderstandwhethertheliquidaffects
thetasteandtextureofthebeef,andhowitmightbecombinedwithmodernpackagingforeven
